The process of removing suspended particles, fat, and cloudiness from a stock, broth, or butter to produce a crystal-clear liquid or pure fat.
From the Latin 'clarificare' (to make clear), via Old French 'clarifier'. The culinary application of raft clarification was codified in Escoffier's 'Le Guide Culinaire' (1903) but the technique is centuries older in French and English cookery.
Definition
Clarification refers to two distinct but conceptually related culinary processes. STOCK CLARIFICATION (for consommé): A cold, defatted stock is combined with a 'clearmeat' — a mixture of lean ground meat, aromatic vegetables (mirepoix), acid (tomatoes or wine), and beaten egg whites. As this mixture is brought slowly to a simmer, the proteins in the meat and egg whites coagulate and rise to form a 'raft' that floats on the surface. The raft acts as a mechanical and electrochemical filter: it physically traps suspended particles as the stock percolates up through it, and the proteins adsorb colloidal impurities that cause cloudiness. The stock must never boil once the raft forms — a rolling boil breaks the raft apart and drives particles back into suspension, ruining the batch. A 'chimney' (a small opening nudged into one side of the raft with a spoon) allows the cook to ladle from underneath without disturbing the filter. After 45–90 minutes of gentle simmering, the stock is passed through a fine-mesh strainer lined with dampened cheesecloth (étamine), yielding a consommé of gemstone clarity that magnifies light. CLARIFIED BUTTER (beurre clarifié): Unsalted butter is melted gently over low heat without agitation. The water evaporates, the milk solids sink and settle (or rise as foam), and the pure golden butterfat separates. The foam is skimmed and the fat is carefully poured off — or ladled — leaving the milk solids behind. The result is pure anhydrous butterfat with a smoke point of ~250°C (482°F), compared to ~150°C (302°F) for whole butter. Clarified butter is used for high-heat sautéing, hollandaise sauce, basting, and sealing pâtés. Indian ghee is clarified butter taken a step further: the milk solids are allowed to toast lightly before removal, adding a characteristic nutty aroma. A third, less common method of stock clarification uses a gelatin-filtration technique: a rich, highly gelatinous stock is frozen solid and then thawed slowly through cheesecloth; as the ice crystal matrix melts, it releases a perfectly clear consommé-like liquid, leaving most cloudiness trapped in the frozen gelatin network. This method, popularized by Heston Blumenthal and Ferran Adrià, requires no egg whites or clearmeat and preserves a delicate, clean flavor.

Why the raft works
Egg whites and lean meat proteins denature between 60–80°C. As they coagulate into a porous matrix, two forces act simultaneously: mechanical filtration (particles too large to pass through the protein mesh are trapped) and electrostatic adsorption (charged protein surfaces bind oppositely-charged colloidal impurities — the main source of cloudiness in stocks). The acid component (tomatoes, white wine) lowers pH, encouraging protein coagulation and improving the raft's binding efficiency.
Gelatin filtration (frozen clarification)
A highly gelatinous stock (minimum 3% gelatin by weight) is cooled, defatted, frozen solid in a container, then unmolded and suspended over a strainer lined with muslin in a refrigerator. As the ice melts over 24–48 hours, the clarified liquid drips through naturally. The method yields impeccably clear, intensely flavored consommé without any dilution from clearmeat. The stock must be sufficiently gelatinous; water-thin stocks fail to trap cloudiness in the crystal matrix.
Clarified butter vs. ghee
Both are purified butterfat, but ghee undergoes an extra step: after the water has evaporated, the milk solids are allowed to turn golden-brown before being filtered out, creating a complex of toasted-milk flavors (diacetyl, methylbutanal, lactones) that give ghee its distinctive nutty-caramel character. Ghee also has a longer shelf life (months at room temperature) because there is no residual moisture to support rancidity.
