Professional-grade chocolate with elevated cocoa-butter content (≥31 %) formulated for thin, glossy coatings and precise molding, requiring tempering to achieve snap, sheen, and clean release.

Definition

Couverture is the professional chocolatier's fundamental raw material: a chocolate that meets minimum cocoa-butter thresholds — 31 % total cocoa butter for dark couverture under European standard (Directive 2000/36/EC) and analogous Codex Alimentarius norms — compared with the 18–20 % typical of mass-market baking chocolate. Dark couvertures commonly carry 36–45 % total fat; milk and white couvertures have their own minima. The elevated fat makes couverture markedly more fluid when melted ('fluidity' is rated in 'drops' from 1 drop/thick paste to 5 drops/very fluid on the packaging). That fluidity allows a confectioner to dip ganache centers and achieve an even, thin shell of 2–3 mm rather than the thick, uneven coat a low-fat chocolate produces. It also enables clean filling of polycarbonate molds with minimal pooling and perfect release once the chocolate has contracted through crystallization. Because couverture is almost entirely cocoa butter (rather than added vegetable fats), it must be tempered before use. Tempering is a controlled melting-and-cooling sequence that encourages the majority of cocoa-butter crystals to form in the stable Form V (β) polymorph. Properly tempered couverture sets with a mirror gloss, a hard snap on breaking, and a smooth melt on the palate; it contracts cleanly from molds. Untempered or mis-tempered couverture develops bloom — either fat bloom (grayish-white streaks as unstable crystal forms migrate) or sugar bloom (grainy surface from moisture condensation). Couvertures are sourced by origin (single-origin Madagascan, Ecuadorian, Venezualan) or as blended assemblages with standardized flavor profiles; leading brands include Valrhona, Callebaut, Cacao Barry, Felchlin, and Michel Cluizel. Cacao percentage printed on packaging reflects total cocoa solids (non-fat cocoa solids plus cocoa butter), not cocoa-butter content alone.

In use

Melt the 70% dark couverture to 50 °C, cool on marble to 28 °C, then bring back to 31–32 °C before dipping the pralines so the coating sets with full gloss.

Fluidity ratings

Couverture packaging typically shows a drop count (1–5 drops) indicating viscosity at working temperature. A 1-drop couverture is thick and ideal for molded tablets where texture is desired; a 5-drop couverture is highly fluid and suited for ultra-thin enrobing of delicate centers or spraying. Matching fluidity to application prevents common defects like thick feet on dipped bonbons or incomplete mold filling.

Storage and handling

Couverture callets (chips) or pistoles should be stored in cool (15–18 °C), dry, odor-free conditions away from light. Because cocoa butter readily absorbs ambient aromas and is hygroscopic, improper storage is a leading cause of flavor tainting and sugar bloom before the chocolate is even melted.
