Ganache

A smooth, stable emulsion of chocolate and hot cream — and sometimes butter — whose ratio of fat to water determines whether it sets as a pourable glaze, a firm truffle center, or a whippable mousse base.

/gah-NAHSH/French: ganache, colloquially 'jowl' or 'fool' — legend holds that an apprentice accidentally poured boiling cream into chocolate and was called a ganache by his master, who then discovered the mixture was delicious; the etymology is disputed but the name has been used in French confectionery literature since the 1850s.

Definition

Ganache is an emulsion in which cocoa-butter droplets (and solid cocoa particles from the chocolate) are dispersed through an aqueous phase contributed by cream, milk, butter, or liquid flavoring. The emulsion is stabilized by the lecithin naturally present in chocolate and, where used, additional emulsifiers. The ratio of chocolate to cream governs final texture: • 1:1 (chocolate:cream by weight) — a standard glaze ganache; pours smoothly at 32–35 °C and sets to a soft, fudgy consistency that can coat a cake in a mirror-thin layer. • 2:1 — a firmer ganache suitable for rolled truffle centers; sets at room temperature to a plastic, sliceable body. • 3:1 — a very firm ganache for molded bonbon fillings, especially where a long shelf-life is needed; may also contain inverted sugar (trimoline) or glucose syrup to retard crystallization and extend shelf stability. • 1:2 (chocolate:cream) — a thin ganache, often the base for warm chocolate sauce or for whipping into a light filling once cooled. Making ganache requires careful emulsification. The classic method is to pour scalded cream (70–90 °C — hot enough to melt the chocolate but not so hot as to scorch cocoa solids) over chopped chocolate, let stand briefly, then stir or blend from the center outward. This center-first technique builds the emulsion from a small stable nucleus, preventing the fat from separating into an oily, broken mass. An immersion blender used gently prevents over-aeration. Flavoring is integrated while the ganache is still warm: infused creams (vanilla, tea, citrus zest, herbs), alcohol (whisky, rum, Grand Marnier — added last to prevent the ethanol from breaking the emulsion), fruit purées (replacing part of the cream), and spices. Butter is often added at 30–35 °C to increase gloss and shorten (tenderize) the final texture. Whipped ganache is a ganache cooled fully to 18–20 °C then aerated with a stand mixer, producing a mousse-like frosting with a much lighter body. It must be used quickly as continued crystallization will cause it to seize.

In use

Pour the hot cream over the dark couverture and let it sit for two minutes before stirring to build a smooth ganache, then fold in the butter and calvados off heat.

Why ganache breaks — and how to rescue it

A broken ganache separates into an oily grease and a pasty cocoa-solid mass. The most common cause is excess free water overwhelming the emulsifying capacity of the lecithin, or a temperature differential too great when cream meets chocolate (both sides should be near 35–40 °C). To rescue: add a small amount of warm cream in a thin stream while stirring vigorously from the center, or blend gently with an immersion blender. Adding cold milk or water will make the break worse.

Water activity and shelf life

Ganache shelf life is governed by water activity (aW). A 2:1 ganache with no added humectants has an aW near 0.90 — high enough to support microbial growth within a week at room temperature. Professional confectioners lower aW to 0.70–0.75 by substituting glucose syrup or inverted sugar for part of the cream and keeping chocolate-to-cream ratios high, extending shelf life to three to six weeks without refrigeration.
