Desalar (Bacalao)

The process of rehydrating and desalting salt-cured dried cod by soaking in cold water with repeated changes, restoring it to a palatable, cookable texture and saltiness.
/deh-sah-LAR bah-kah-LAH-oh/Spanish; desalar from des- (removal) + sal (salt); bacalao from Old Spanish bacallao, possibly from Dutch bakeljauw or from a pre-Roman Basque root. The Portuguese equivalent is bacalhau.
Definition
Desalar is the mandatory preparatory step for salt-dried cod (bacalao) before it can be used in cooking. Salt cod is preserved by heavy salting and partial or full drying, which draws out moisture and concentrates salt to levels that would make the fish inedibly briny and texturally rigid if cooked without treatment. Desalting reverses the osmotic process: cold water enters the fish tissue while salt diffuses outward across the concentration gradient. **Standard protocol:** Rinse the dried cod under cold running water to remove surface salt crystals. Place skin-side up in a large container (skin-up encourages salt to drain downward rather than concentrate at the skin surface). Cover with cold water by at least 5 cm. Refrigerate — never desalt at room temperature, as bacterial growth becomes a real risk once salt drops below preserving levels. Change the water every 8–12 hours. Total soaking time depends on the thickness of the piece and the degree of drying: thin, semi-dried loins need 24–36 hours; thick, fully dried boned pieces (morro, lomos) require 48–72 hours. Some Spanish and Portuguese cooks recommend a 'taste test' at 36 hours — the flesh should be pleasantly seasoned, not mildly briny. **Temperature matters critically.** Desalting at room temperature accelerates diffusion but risks fermentation and off-flavors. Cold water (below 10°C / 50°F, ideally refrigerator temperature) draws salt slowly and safely. In some traditional Basque preparations, running cold water replaces standing water, shortening the process to 12–18 hours, though this wastes water. **The role of residual salt:** Perfectly desalted bacalao retains a light salinity — it should not be bland. The goal is equilibrium seasoning, not desalination. Cooks who forget this over-soak their bacalao and then need to correct with salt later, defeating the purpose. The rehydrated cod should be firm, slightly translucent in the thickest parts, and smell clean and oceanic rather than sharp and ammoniated. **After desalting:** Pat dry thoroughly before cooking. The flesh will have rehydrated considerably and regained its characteristic layered, flaky structure — the signature laminar texture that makes bacalao valuable in dishes like brandada, pil-pil, and bacalà mantecato.

Why skin-side up
Salt tends to be most concentrated near the skin where brine was absorbed first. Placing the piece skin-up allows gravity to assist the downward diffusion of salt into the soaking water. This is a Basque and Catalan kitchen convention; some Portuguese cooks invert the practice for their thicker peças. Both approaches work; the key variable is water changes, not orientation.
Semi-desalted bacalao (media sal)
Some preparations deliberately call for bacalao that is only partially desalted — left saltier than usual — to season a dish with less added salt. Bacalao a la vizcaína and certain Catalan escudella preparations use media sal cod, stopping the soak at 24 hours for a thick piece.
Freezing after desalting
Desalted bacalao can be frozen immediately after the final water change. Freezing then thawing creates additional cellular rupture that releases more of the natural gelatin in the skin and bones — a useful quality for pil-pil sauce, where the emulsification depends on that collagen.
