Dessécher

The step in making pâte à choux where the flour-water-butter panade is stirred vigorously over heat to drive off excess moisture, building a dry, cohesive paste that can absorb maximum eggs.

Definition
Dessécher is the critical intermediate step in the production of pâte à choux (choux pastry) — the moment after flour has been beaten into the boiling water-butter mixture that the resulting panade (cooked paste) is dried over the heat source before eggs are incorporated. When flour hits the boiling liquid, starch granules instantly gelatinize and absorb all available water, forming a thick, stretchy paste. This paste still contains free moisture — droplets that did not bond to starch during gelatinization. If eggs are added at this stage, those free water molecules compete with the egg proteins for space, diluting the protein network and producing a final choux that is dense, soft, and unlikely to hollow out properly in the oven. Desséchage solves this by continuing to cook the panade over medium heat, stirring constantly and vigorously with a wooden spoon or stiff spatula, for 1–3 minutes. The mechanical action also develops the starch network, making the paste smoother and more cohesive. Two visual cues signal that the panade has been sufficiently dried: a thin, floury film (singer) forms on the bottom and sides of the pan, and the paste pulls cleanly away from the pan walls into a single mass. At this point the gelatinized starch has been pushed toward its maximum capacity to absorb moisture — it is now primed to take on the eggs that follow. Adding eggs to an under-dried panade produces choux that spreads flat and bakes into a dense, eggy pancake rather than a hollow, crisp shell. Adding eggs to an over-dried panade (dried too long or reheated) yields a stiff paste that cannot expand in the oven. The brief window after correct desséchage is when the panade is at its most receptive.

The pan-film test
The classic test for completed desséchage is the white film (called la croûte or singer) that deposits on the saucepan's bottom and sides after 1–3 minutes of vigorous stirring. This is gelatinized starch that has dried against the hot metal. When this film appears and the paste pulls away cleanly as a single ball, the step is done.
Temperature before adding eggs
The dried panade should cool to around 60–65 °C before eggs are beaten in — hot enough to stay pliable, cool enough that the egg proteins don't begin to coagulate prematurely. Many pastry chefs transfer the panade to a stand mixer and let it beat briefly to release steam before adding eggs one at a time.
Diagnosing failures
Choux that spreads flat on the baking sheet almost always traces to insufficient desséchage. Choux that cracks radially and doesn't puff symmetrically often signals that the panade was too cool or that eggs were added too quickly. Collapsed (fallen) choux after the oven typically means underbaking, not a desséchage problem.
