Honey Process (Coffee)

A coffee processing method in which varying amounts of fruit mucilage are left on the bean during drying, creating a flavor spectrum from clean brightness (white honey) to rich, jammy sweetness (black honey).
The term 'honey' refers to the sticky, honey-like texture of the mucilage on the bean, not to any use of actual honey. The method as a named and classified system emerged in Costa Rica circa 2006–2009, gaining international recognition at the Cup of Excellence competitions.
Definition
The honey process occupies the middle ground between the fully washed process—where all fruit residue is removed before drying—and the natural (dry) process—where the whole cherry dries intact. In honey processing, the outer cherry skin is pulped off mechanically, but the sticky mucilage layer (the fruit flesh bonded to the bean's parchment) is left on to varying degrees rather than being fermented away or pressure-washed off. The beans then dry on raised beds, patios, or mechanical dryers for 2–6 weeks, during which the residual mucilage undergoes controlled fermentation and desiccation, imparting sugars and organic acids directly into the bean. The flavor and body of the finished coffee correlate closely with how much mucilage remains, which is why producers and roasters use a color classification system based on the dried mucilage's appearance: White honey (5–10% mucilage left, lightest, closest to washed), Yellow honey (25–50% mucilage, medium sweetness, gentle acidity), Red honey (50–75%, fuller body, stone-fruit notes), and Black honey (90–100% mucilage retained, richest sweetness, longest drying time, most fermentation-forward character, closest to natural). The system originated in Costa Rica in the late 2000s and quickly spread to El Salvador, Guatemala, and Brazil, where it is called pulped natural (the parchment is also removed before drying in the Brazilian variant). Producers choosing honey processing trade flexibility for precision: the drying phase demands constant raking and vigilance to prevent mold when so much sugar is present on the bean surface, but the reward is a coffee that expresses the sweetness of fruit without the polarizing wild ferment of naturals, while retaining more brightness than a full natural allows. Honey process coffees perform especially well in single-origin filter brewing, where their layered sweetness—apricot, peach, brown sugar, caramel—is most legible.

White–Yellow–Red–Black spectrum
The four honey designations are not standardized internationally by a single body, so producer and importer usage varies. Some producers use 'gold honey' between yellow and red. The color names refer to the appearance of the dried mucilage on the parchment—which shifts from pale beige (white) to deep mahogany-brown (black)—rather than to any intrinsic bean color. Buyers should confirm with importers what mucilage percentage a specific lot represents, as the labels are descriptive conventions rather than certified grades.
Drying management and defect risk
High-mucilage honeys (red, black) require meticulous drying bed management in humid environments. Beans must be turned every 30–90 minutes during the first days to prevent the sugary mucilage from cementing adjacent beans together (causing uneven drying) or fostering unwanted mold growth. Inadequate airflow during these critical early days is the primary cause of ferment or potato-defect taints in honey-processed coffees.
Pulped natural vs. honey
Brazilian 'pulped natural' coffees are technically a form of honey processing, but the terminology diverged because Brazilian producers traditionally dry their beans on concrete patios rather than raised beds, and the parchment is often removed earlier in the drying cycle. The flavor profile overlaps with yellow-to-red honey: nutty, chocolatey, low-acid—reflecting Brazil's lower-altitude growing conditions as much as the process itself.
