Kalchatti

A South Indian cooking vessel carved from chlorite schist (soapstone) prized for its exceptional heat retention, slow and even distribution, and the trace mineral exchange that imparts a characteristic earthen, slightly mineral flavour to long-cooked curries and stews.
/kal-CHAH-ti/Tamil: kal (கல்) = stone; chatti (சட்டி) = vessel, pot. The compound term is specific to South Indian usage, particularly Tamil Nadu and Kerala. Cognate terms exist in Kannada (kallu chatti) and Malayalam (kal chatthi).
Definition
Kalchatti (கல்சட்டி in Tamil; literally 'stone vessel' from kal, stone, and chatti, pot or vessel) is a cooking pot hand-carved from chlorite schist, a soft metamorphic rock commonly called soapstone. The material is quarried primarily in Tamil Nadu (notably in Thiruvannamalai and Villupuram districts), Karnataka, and Kerala, and has been used for cooking vessels across South India for at least two millennia — soapstone cookware fragments have been recovered from Iron Age archaeological sites in the region. Soapstone's thermal properties are fundamentally different from clay, cast iron, or stainless steel. It has an exceptionally high specific heat capacity — it absorbs and stores more energy per unit of mass than almost any other common cooking material. It heats slowly and evenly with no hot spots, and once at temperature it radiates heat steadily long after the flame is removed. This makes the kalchatti ideal for dishes that benefit from long, slow, even heat: coconut milk curries, fish preparations (especially in Kerala, where the kalchatti fish curry is a regional classic), dals, and rice-based porridges. Food in a kalchatti arrives at the table still simmering gently, and portions served near the end of a meal are no cooler than those served first. The porous nature of soapstone adds a further dimension: the stone slowly absorbs fats, oils, and aromatic compounds over many uses, seasoning progressively like a cast-iron pan. An old, well-used kalchatti imparts a subtle mineral-earthen note to food that cooks describe as inseparable from 'the real taste' of certain dishes. Coconut oil, turmeric, and curry leaf infiltrate the stone's pores over months and years, and scrubbing with abrasives destroys this accumulated seasoning. New kalchatti must be cured before use: the pot is coated inside and out with raw rice bran or castor oil, left to absorb for a day, then slowly heated over a low flame to seal micro-fractures and set the seasoning. Some potters cure them at source before sale. The pot should never be subjected to sudden thermal shock (cold water into a hot pot) as soapstone, while resilient, can crack under rapid thermal differential. Kalchatti is unsuitable for induction cooktops but functions on gas, charcoal, and wood fire, and transfers well to a very low electric element.

Curing and maintenance
First use: coat the interior and exterior with raw rice bran oil or castor oil, leave for 24 hours, then heat very slowly over a low flame for 30 minutes. Allow to cool completely. Repeat the oil coat and heating cycle two or three times before cooking food in the vessel. To clean, rinse with warm water and a soft cloth immediately after use — do not soak. Never use soap, as it is absorbed by the stone and will taint subsequent batches. Occasional re-oiling of the exterior preserves the stone and prevents surface cracking.
Why certain dishes taste different
The kalchatti effect on flavour is measurable and not merely traditional preference. The slow, even heat prevents the scorching of coconut milk that occurs easily in thin-walled metal pots; the mineral surface interacts with acidic tamarind and tomato in ways that deepen umami through trace ion exchange (principally magnesium from the chlorite schist); and the residual absorbed oils from previous batches contribute a background note of accumulated seasoning. Experienced South Indian cooks maintain that a kalchatti used daily for a year is a fundamentally different cooking tool than a new one.
