An egg-shaped, thick-walled ceramic charcoal cooker of Japanese origin that functions simultaneously as a grill, smoker, and oven through precise dual-vent airflow control and exceptional heat retention.

/kah-MAH-doh/Japanese (竈); from an ancient word for a clay cooking hearth or range. The contemporary barbecue kamado descends specifically from the mushikamado, a clay rice-steaming vessel imported to the US market in the late 1940s.

Definition

The kamado is a thick-walled, oval or egg-shaped cooker whose body is made from high-grade refractory ceramics — typically a blended cordierite or a variant of the traditional Japanese clay composition. Its origins lie in ancient clay cooking vessels brought to Japan from China over a thousand years ago; the word kamado (竈) originally referred to any clay cooking range or hearth. The modern charcoal kamado as understood in barbecue culture descends from these traditional Japanese earthenware pots, popularized in the United States after World War II. The ceramic body is the defining performance element: it absorbs and stores enormous amounts of heat while losing very little through radiation, creating a stable thermal environment inside that high-end metal grills cannot match. The classic egg shape minimizes the interior surface area exposed to the fire relative to the cooking volume, which promotes natural convection and even heat distribution. Airflow is governed by two adjustable vents — a lower vent (the draft door) controls primary air supply to the charcoal fire; an upper daisy-wheel vent controls exhaust and thus the rate of convective airflow through the cooking chamber. Cracking the lower vent slightly and nearly closing the upper produces smoldering low-and-slow temperatures of 107–135°C for all-day smoking. Opening both vents wide drives searing temperatures above 370°C for high-heat grilling. Because the ceramic retains so much heat, temperature changes are slow — it takes patience to raise or lower the internal temperature after equilibrium is reached, meaning anticipatory vent management is the core skill. The kamado excels at holding precise set temperatures for extended cooks, making it capable of perfect brisket, whole roasted chicken, wood-fired pizza, and reverse-seared steaks from a single versatile tool.

In use

She lit a small starter cube under the lump charcoal, then set both vents to fully open to bring the kamado up to temperature, knowing she'd need to start closing them twenty degrees before her 225°F target to avoid overshooting.

Thermal overshoot and patience

The ceramic's heat retention that makes the kamado so efficient also makes it unforgiving when correcting temperature errors. If the internal temperature overshoots by 50°C, closing the vents can take 30–45 minutes to bring it back down, and the residual heat in the walls means the internal temperature continues to rise briefly after the vents are restricted. Experienced kamado operators load charcoal conservatively, start with vents nearly closed once the coals catch, and approach their target temperature slowly from below.

Lump vs. briquette charcoal

Kamado manufacturers and most experienced users strongly prefer lump hardwood charcoal over briquettes. Lump charcoal burns cleaner (fewer ash-producing binders and fillers), responds to vent changes more quickly, and produces less ash that can clog the lower vent. For long smokes, lump charcoal mounded into the firebox with a 'minion method' layout — unlit charcoal surrounding a small lit core — will sustain 10–16 hours without refueling.

Adding wood smoke

Because the kamado burns charcoal in a near-oxygen-limited environment during low-temperature cooks, wood chunks (not chips) are preferred for smoking. Chips combust too quickly; chunks nestled among the lump charcoal smolder for hours. Common pairings: oak or hickory for beef, fruit woods for pork, pecan for poultry. The kamado's sealed ceramic environment traps aromatic smoke compounds more efficiently than open-format barrel smokers.
