Lump Charcoal vs. Briquette

Definition
Charcoal for grilling and smoking comes in two fundamentally different forms. Lump charcoal is produced by pyrolyzing (charring in the absence of oxygen) whole pieces of hardwood — oak, hickory, mesquite, cherry, and others — leaving irregular chunks that retain the original wood's cell structure. Briquettes are manufactured by compressing powdered charcoal (typically lower-grade wood byproducts or char dust) with binders — most commonly corn starch, borax, limestone, or sodium nitrate — and molding them into uniform pillow shapes. Each form carries distinct performance characteristics: Lump charcoal ignites faster (typically ready in 10–15 minutes versus 20–25 for briquettes), burns hotter (peak temperatures of 700–900 °C are achievable), produces less ash, and imparts a clean hardwood aroma. Its irregular shape creates variable air gaps and thus inconsistent burn rates, and cheaper lump products sometimes include construction wood scraps that can off-gas resins. Briquettes burn at lower, more consistent temperatures and produce predictable heat over longer periods — their uniform shape stacks and packs tightly, which is ideal for the Minion Method or Snake Method long-burn configurations. The binders produce white ash on ignition and generate significantly more total ash volume. High-quality Japanese binchotan (white oak extruded charcoal) occupies a separate premium category — it burns at moderate, extraordinarily stable temperatures with minimal smoke and virtually no smell, making it the charcoal of choice for yakitori and other Japanese live-fire cookery. For most high-heat grilling where sear and direct flavor are priorities, lump charcoal from a single hardwood species is preferred; for long, temperature-controlled smoking sessions where fuel consistency matters more than peak heat, briquettes from a reputable manufacturer (Kingsford Professional, Weber, Jealous Devil) provide more predictable behavior.

Ash and Cooker Maintenance
Briquettes can produce three to four times the ash volume of equivalent lump charcoal. In long cooks, ash accumulation can smother the fire by restricting airflow beneath the coals. Cookers with wide ash catchers and regular shaking grates (e.g., Weber Smokey Mountain, Pit Barrel Cooker) handle briquette ash better than tightly-packed drum-style smokers.
Hardwood Species and Flavor
Quality lump charcoal from a single identified species — oak, cherry, mesquite, hickory — imparts a subtle flavor profile from the wood's retained volatile phenols. Cheap mixed-wood or unidentified-source lump can taste acrid from softwood resins. Briquettes with pure corn-starch binder are flavor-neutral; those with chemical accelerants (sodium nitrate) must be fully ashed over before food is placed on the grate.
