Nappe

The consistency at which a sauce clings to and coats a spoon in a smooth, even layer without dripping off immediately.

Definition

Nappe (French: 'tablecloth', 'sheet') describes the precise viscosity at which a sauce adheres to a surface — classically demonstrated by drawing a clean line through the sauce coating the back of a spoon with a fingertip and observing whether the line holds sharp and clear. If the sauce flows back to fill the gap, it is too thin; if it clings in an uneven mass, it is too thick or broken. At nappe, the line remains distinct, the sauce drapes the spoon in a thin, uniform film, and when the spoon is held at an angle the sauce flows down slowly in a sheet rather than dripping in droplets. The word captures the visual effect: a sauce that lies across a plate or food the way a cloth napkin drapes over a surface — smoothly and without pooling. In classical French technique, nappe is the viscosity target for the family of sauces velouté, béchamel, and cream-enriched jus: thick enough to coat and cling to food without being gluey or starchy in texture. Achieving nappe requires understanding the multiple thickening agents at work in a sauce — gelatin from stock, starch from a roux or slurry, emulsified fats from butter mounting or cream reduction, and egg yolk lecithin in a sauce hollandaise or suprême — and calibrating reduction and addition to hit the target. A sauce can pass through nappe into over-reduction (which produces a glaze-like coat that congeals on a cold plate) or remain below it (a jus that runs freely across the plate). Temperature matters: most sauces thin substantially when hot and thicken as they cool, so the nappe test must be performed at the intended service temperature.

The spoon test in practice

The back-of-spoon finger test is a tactile and visual check in one motion. Dip a clean metal spoon into the sauce, lift it out, and turn it coating-side up. Run one fingertip across the middle of the coated back. At nappe: the channel stays clean, the sauce on either side holds in place. Below nappe: the sauce slides back across the line. Beyond nappe: the coat is too thick and may feel gluey when tasted. The test should be done with the sauce at its intended service temperature, since sauce behavior changes significantly between 85 °C and 65 °C.

Temperature and cooling behavior

A sauce that tests correctly at nappe straight off the heat may be too thick on a room-temperature plate. Gelatin-rich sauces — those built on reduced stock — are particularly prone to this: they barely hold the nappe line at 85 °C but set firmly when they hit a cold plate at 20 °C. The fix is to thin the sauce slightly before service, or to ensure plates are warm. Starch-thickened sauces are more stable across temperature but risk developing a skin if left uncovered.

Nappe vs. glacer vs. napper

The verb napper means to coat food with a sauce — as in 'napper the filet with sauce Béarnaise.' Glacer (to glaze) is a heavier coat applied by spooning a reduced, glossy sauce over food and finishing under the broiler or salamander. Nappe as a noun describes the consistency that makes napper possible. Understanding the grammatical shift avoids the common confusion between the target texture and the coating action.
