Pellicle (Fermentation)

A protective surface film of cellulose and microbial colonies that forms atop a fermenting liquid, indicating active culture health.

Latin: pellicula, diminutive of pellis (skin); adopted into microbiology in the nineteenth century to describe surface biofilms.

Definition

In fermentation, a pellicle is a structured biofilm—most often a mat of bacterial cellulose—that forms at the air-liquid interface of a fermenting vessel. The term derives from the Latin 'pellicula' (thin skin). In kombucha and jun brewing, the pellicle is the flat, rubbery layer produced by Acetobacter and related acetic acid bacteria that weave cellulose fibers into a matrix housing the full SCOBY community (both bacteria and yeast). The pellicle serves several functions: it restricts oxygen penetration to the bulk liquid below while exposing the culture itself to air (acetic acid bacteria are obligate aerobes); it acts as a physical barrier against competing microorganisms and dust; and it provides a nursery medium from which new starter cultures can be propagated. Pellicle formation is not strictly necessary for successful fermentation—many batches ferment well with only liquid starter—but a thick, intact pellicle is widely taken as a sign of a vigorous, balanced culture. Pellicle appearance varies with temperature, pH, culture age, and tea type: it may be thin and translucent in early batches, grow to several centimeters thick in mature vessels, and develop brown striations, bubbles, or uneven surfaces that are cosmetically imperfect but microbiologically normal. In other fermented beverages (kefir grains excepted, which are a distinct polysaccharide matrix), surface films of Kahm yeast can also be called pellicles; these are usually thin, white, and less structured than a bacterial-cellulose kombucha pellicle, and their acceptability depends on the ferment type and smell.

In use

After two weeks, a firm pellicle had formed across the top of the kombucha vessel, reassuring the brewer that the SCOBY culture was thriving.

Pellicle vs. Kahm Yeast

A true bacterial-cellulose pellicle is rubbery and cohesive; Kahm yeast films are thin, powdery or wrinkled, and appear on lacto-fermented vegetables. The two are sometimes confused: Kahm is generally harmless if the ferment smells right, while a discolored or fuzzy pellicle on kombucha warrants discarding if mold is suspected.

Hotel and batch use

In continuous-brew kombucha systems, the pellicle grows downward with each cycle; some brewers periodically peel and discard excess pellicle to prevent the vessel from overfilling. The removed pellicle can be used as a starter for a new hotel jar.
