Standardised blends of sodium chloride and curing agents — #1 contains sodium nitrite for short-cured products, #2 adds sodium nitrate for long-aged salumi — dyed pink to prevent accidental misuse as table salt.

Named in reference to Prague's long tradition of Central European meat curing; the standardised commercial blend was formalised in the early 20th century in parallel developments in Germany, Austria-Hungary, and the United States.

Definition

Prague Powder and Insta Cure are trade names for the two standardised commercial curing-salt blends used in professional and artisan meat curing. Both consist primarily of sodium chloride (ordinary salt), which acts as the carrier and diluent, with curing agents at precisely controlled concentrations. The pink colouring — achieved with food-grade dye (FD&C Red No. 3 or similar) — is a mandatory safety measure: it visually distinguishes the blends from table salt and warns handlers not to use them as a seasoning condiment, since the concentrated curing agents are toxic at culinary doses. Prague Powder #1 (also marketed as Insta Cure #1, DQ Curing Salt, Modern Cure, or sel rose #1 in France) contains 6.25% sodium nitrite and 93.75% sodium chloride. The standard usage rate is 1 teaspoon (approximately 5.7 g) per 5 pounds (2.27 kg) of meat, or more precisely 0.25% of total meat weight. It provides rapid antimicrobial protection via nitrite — effective over the days to weeks required for bacon, corned beef, hot dogs, and other products that will be fully cooked before consumption. The nitrite is fully consumed within the curing and cooking window, leaving no residual nitrate in the finished product. Prague Powder #2 (Insta Cure #2, DQ Curing Salt #2) contains 6.25% sodium nitrite, 4% sodium nitrate, and 89.75% sodium chloride. The nitrate fraction acts as a slow-release reservoir: naturally occurring bacterial enzymes reduce it to nitrite over months, maintaining antimicrobial protection throughout the extended air-drying period required for whole-muscle salumi (prosciutto, guanciale, coppa, bresaola, lonza) and long-fermented dry sausages. Prague Powder #2 must never be used in products that will be consumed quickly — the residual nitrate serves no purpose, contributes unnecessary nitrogen load, and can elevate finished nitrite above regulatory ceilings if cooking occurs before complete conversion. Neither blend should be confused with Himalayan pink salt or tinted finishing salts; those contain no nitrite or nitrate. The historical name 'Prague Powder' derives from Central European cured-meat traditions, where the standardised blend was developed in the early twentieth century to reduce botulism mortality associated with traditional sausage and ham production.

In use

The recipe called for Prague Powder #2 — not #1 — because the lonza would hang in the curing chamber for four months; the slow-release nitrate would keep converting to active nitrite throughout the entire drying period.

Why pink?

The pink dye is not a flavour or preservation ingredient — it exists solely as a visual warning. Sodium nitrite at curing concentrations (0.25% by meat weight) is safe; at table-salt concentrations (several grams per serving) it is acutely toxic. The dye ensures no one mistakes curing salt for seasoning salt. All reputable commercial blends are dyed; undyed 'pure' nitrite blends exist for industrial injection systems where colour would stain finished product, but they are not appropriate for home or artisan use.

#1 vs. #2 — the decision rule

The choice is determined entirely by how long the product will cure and dry before it is eaten, not by the type of meat or the flavour profile desired. Cure time under four weeks: use #1 only. Cure-plus-dry time exceeding four weeks: use #2. Using #2 in a product that will be cooked within days is unnecessary and potentially increases nitrite in the finished meat above USDA limits if cooking occurs before full nitrate conversion.

Sourcing and shelf life

Both blends are available from sausage-supply companies (e.g. Butcher-Packer, Sausage Maker, Allied Kenco). They have an indefinite shelf life if stored dry, sealed, and away from light. Do not purchase from unknown suppliers without verifiable nitrite/nitrate percentages — concentration accuracy is critical to both safety and legality.
