Wet Cure / Brine

A curing method in which protein is submerged in a salt-and-water solution, allowing salt and moisture to equilibrate across the tissue and delivering a juicier, more uniformly salted result than dry curing.

Definition
Wet curing, commonly called brining, involves dissolving salt, curing salts (sodium nitrite for short cures, sodium nitrate for extended ones), and optional flavour agents — sugar, honey, aromatic spices, herbs — in water to create a cure solution, then submerging a protein in that solution for a specified time under refrigeration. The process exploits the same osmotic and diffusion principles as dry curing, but the aqueous medium accelerates salt penetration and simultaneously drives water into the tissue: meat in a brine typically gains 6–10% of its raw weight in moisture, which buffers against the drying that occurs during subsequent cooking. This makes wet curing the preferred method for products that will be fully cooked and eaten as whole cuts — corned beef, pastrami, cured hams for roasting, and turkey — rather than air-dried charcuterie, which requires moisture loss. Brine concentration is expressed either as a percentage of salt by weight of total solution (modern food-science convention) or as percentage of saturation read on a salometer or Baumé hydrometer (traditional meat-trade usage). A 10% weight-percent solution (roughly 23° salometer) is standard for most muscle proteins; pink brines for deli ham run 6–8%. Injection brining — pumping brine directly into deep muscle via multi-needle equipment — is the industrial shortcut that reduces equilibration time from days to hours, though it cannot replicate the texture and flavour depth of traditional immersion.

Brine vs. simple salt brine (cook's brine)
Cooks frequently use the word 'brine' for a salt-water soak applied to poultry or pork before roasting — a technique that adds juiciness and seasoning but is not a preservation cure because it uses no nitrite and the meat is cooked within 24–48 hours. True wet curing for preservation requires sodium nitrite (Prague Powder #1 at 1 tsp per 5 lb meat, or by weight), sufficient time for the cure to penetrate to the centre, and refrigeration throughout. The two uses of the word 'brine' are technically distinct; context and nitrite presence are the distinguishing factors.
Equilibration time
As a rule of thumb, brine penetrates roughly ½ inch (12 mm) per 24 hours at refrigerator temperatures (35–40°F / 2–4°C). A 3-inch-thick brisket therefore needs at least 6 days of immersion for the cure to reach the geometric centre. Meat scientists use the Fickian diffusion model to calculate exact times; in practice, longer is safer than shorter, since equilibrium curing cannot over-salt by design.
