Pre-gelatinizing a portion of flour in hot liquid before adding it to dough, dramatically increasing the bread's moisture retention, softness, and shelf life.
/tang-JONG (Mandarin: tāng zhǒng); yoo-DAH-neh/Chinese/Japanese. 湯種 (tāng zhǒng) is Chinese for 'hot seed' or 'warm starter'; the technique spread through Japanese bakery culture in the 20th century, then gained international attention after Yvonne Chen's 2003 book popularized the tangzhong variant across East Asia and subsequently the English-speaking baking world.
Definition
Scalding — known in Japanese baking as tangzhong (from Chinese 湯種, tāng zhǒng, 'hot seed') or in its more thorough form as yudane — is the technique of cooking a small portion of the recipe's flour with water or milk at temperatures between 65 °C and 95 °C (149–203 °F). At around 65 °C the starch granules in flour absorb water and swell irreversibly, rupturing their crystalline structure in a process called gelatinization. The resulting paste or roux carries far more bound water than raw flour can hold — starch can absorb up to five times its weight in water once gelatinized. When this pre-gelatinized mass is folded into the final dough, the extra moisture is locked inside the starch network and is not driven off during baking, producing a crumb that is exceptionally tender, moist, and feather-light. The loaf also stales more slowly because the gelatinized starch retrogrades at a slower rate than raw starch. Two methods are in common use. The tangzhong method, popularized by Taiwanese cookbook author Yvonne Chen, cooks 5–10 % of the total flour with five parts water to one part flour, stirring over medium heat until the mixture thickens to about 65 °C and leaves lines in the paste. The resulting slurry is cooled before incorporation. The yudane method, favored in Japan, combines a 1:1 ratio of flour and boiling water (100 °C), stirs vigorously, then wraps and refrigerates the paste overnight, allowing the flour to hydrate fully and the starch to gelatinize more completely. Yudane typically yields a slightly chewier, more structured crumb than the softer tangzhong result. Both methods are applied to enriched doughs — most classically Hokkaido milk bread (shokupan), brioche-adjacent rolls, and Taiwanese pineapple cake dough — but the technique transfers to any bread where extreme softness is the goal.

Ratio guidelines
For tangzhong, cook 5–10 % of total recipe flour with 5× its weight in water or milk, targeting 65 °C. For yudane, combine equal weights of flour and boiling water, rest overnight refrigerated. Either paste represents a small fraction of total dough weight but has an outsized effect on finished texture.
Transfer to savory doughs
The technique is not limited to sweet enriched breads. Adding a tangzhong to whole-wheat or rye doughs compensates for the moisture-hungry bran and germ, yielding a softer crumb without requiring excess overall hydration.
