Scalding / Pitching the Curd

Raising the temperature of cut curds in the whey to accelerate syneresis, firm the curd particles, and drive moisture toward the final target; the dividing line between low-cook and high-cook cheeses.

German Brennen ('burning') is used for the same concept in Alpine cheesemaking traditions.

Definition

After coagulated milk is cut into curd pieces, cheesemakers for many styles apply heat — a step variously called scalding, cooking, or pitching the curd — to speed and intensify syneresis (whey expulsion) and to set the texture of the curd particles before pressing. 'Pitching' specifically refers to the moment the stirring is stopped and the curds are allowed to sink and mat at the bottom of the vat; scalding is the preceding heat application that prepares them for this. In practice the two terms are often used interchangeably for the combined cook-and-pitch operation. Temperature is the principal variable: low-cook cheeses (Gouda, Havarti, Edam) heat curds to roughly 37–40 °C (99–104 °F), producing softer, more pliable, moderately moist textures; high-cook or 'hard-cooked' cheeses (Parmigiano-Reggiano, Gruyère, Comté, Emmental) push temperatures to 50–55 °C (122–131 °F), expelling far more whey and creating a dense, dry, granular curd that will age for months or years. At these high temperatures, thermophilic starter cultures (Lactobacillus helveticus, Streptococcus thermophilus) are used instead of mesophilic ones, since only thermophiles survive the heat. The rate of temperature increase is also controlled — usually a slow rise of 1 °C per minute — to allow even heat penetration without shocking the outer layer of each curd piece into sealing prematurely (which would trap whey inside). The cook-and-pitch step is foundational to predicting a cheese's final moisture, hardness, body, and aging trajectory.

In use

To achieve the low moisture required for a 24-month aging wheel, the cheesemaker scalded the curds slowly to 54 °C, stirring continuously for forty minutes before pitching and allowing them to mat and knit on the vat floor.

High-cook vs. low-cook cheese families

The cook temperature is the clearest dividing line between major cheese families. High-cook Alpine wheels (Gruyère, Comté, Beaufort, Parmigiano-Reggiano) are scalded to 52–55 °C and aged for 12 months to several years; their low moisture and dense casein matrix enable long maturation. Low-cook styles (Gouda, Cheddar, Colby) peak at 37–40 °C and retain more moisture, producing a more elastic, sliceable body.

Thermophile vs. mesophile cultures

The choice of starter culture must match the scalding temperature. Mesophilic cultures (Lactococcus lactis) die above ~40 °C; they are used for all low-cook styles. Thermophilic cultures (Lactobacillus helveticus, Streptococcus thermophilus) thrive at 40–55 °C; they are essential for Italian and Alpine hard cheeses and contribute additional flavor complexity through their characteristic amino acid metabolism during aging.
