The Neapolitan technique of dividing bulk-fermented pizza dough into individual balls with a precise cutting and rounding motion that creates surface tension for the final proof.

In Neapolitan baking tradition the term refers specifically to the hand-portioning technique, though the verb is used more broadly in Italian to mean severing a piece. Regional variation exists: in some Campanian bakeries the term is 'staglio a mano' (hand portioning) to distinguish from mechanical dividers.

Definition

Staglio is the dividing and rounding step that immediately follows puntata (bulk fermentation) in Neapolitan pizza dough production. After the bulk dough mass has completed its first fermentation, the pizzaiolo turns it onto a lightly floured work surface and uses a bench knife (or occasionally a pastry cutter) to portion the dough into individual weights — 180–250 g per ball is typical for a 28–35 cm pizza, per AVPN guidelines. The portioning cut itself is made cleanly and without tearing, to preserve the gluten network. Immediately after cutting, each portion is rounded: the dough is cupped in the palm or between both hands and dragged across the bench surface in a circular or figure-eight motion, generating friction that draws the outer skin of the dough taut. This surface tension is the critical technical outcome of staglio — it creates a sealed, smooth exterior that traps the gases produced during appretto (the final proof), gives the ball a defined shape that prevents spreading, and encourages a strong oven rise. Insufficient surface tension results in flat, loose balls that proof unevenly and produce pizza with minimal cornicione (crust rim). After rounding, balls are placed in individual proofing boxes (cassette) or on a lightly oiled tray, covered, and allowed to proof at room temperature for 4–8 hours depending on yeast quantity and ambient temperature. The finished ball should be soft, slightly domed, and puffy with a smooth, slightly matt surface.

In use

Working quickly after the two-hour puntata, he staglioed the dough into 220-gram pieces, rounding each ball with a practiced drag across the bench until the surface was taut enough to hold its dome without spreading.

Surface tension in a rounded dough ball is not metaphorical — it describes a real physical state in which the outer gluten membrane is stretched and aligned by the rounding motion, creating a tight skin that resists gas escape. Bakers test tension by pressing lightly with one finger: proper tension returns the indent slowly but completely within 2–3 seconds. If the indent collapses and stays (too little tension) or snaps back instantly and the surface tears (gluten too tight, often from under-fermented dough), the staglio needs adjustment.

AVPN weight standards

The Associazione Verace Pizza Napoletana specifies dough balls of 180–250 g for a pizza with a finished diameter of 22–35 cm. This range accommodates both the classic Margherita (lighter, with minimal toppings) and Marinara (equally light). Balls outside this range cannot bear the Verace designation regardless of other technique adherence. Competition pizzaioli often use tighter weight tolerances — within ±2 g across a batch — as ball uniformity directly predicts cooking consistency in a wood-fired oven with pronounced hot spots.

Mechanical vs. hand portioning

High-volume pizzerias use mechanical dough dividers that cut and press portions in a single motion. While efficient, mechanical portioning creates stress fractures in the gluten network and requires a brief bench rest ('relaxation time') of 5–10 minutes before rounding. Hand staglio with a bench knife is gentler and preferred in artisan settings where the goal is a more open, irregular crumb rather than the more uniform result achieved by mechanical cutting.
