Steep

Immersing an ingredient in hot or cold liquid to extract its soluble flavors and compounds without boiling or continuous agitation — most familiar in tea, but applied widely across stocks, custards, and herb preparations.
Definition
To steep is to submerge a dry or fresh aromatic ingredient in a liquid — usually water but also milk, cream, wine, or oil — and hold the mixture at a stable temperature (hot or cold) for a defined period, allowing diffusion to carry soluble compounds from the ingredient into the liquid. Unlike boiling or simmering, steeping involves minimal agitation and heat modest enough to avoid driving off volatile top-notes or breaking down delicate structures. Once extraction is judged complete, the ingredient is removed (strained) and the flavored liquid is used on its own. The paradigmatic application is tea. Whole-leaf tea steeped in water at 75–85°C for 2–3 minutes (green) or at 95°C for 3–5 minutes (black) produces a cup of specific astringency, bitterness, and aromatics calibrated to variety and style. Over-steeping extracts excess tannins that bind with salivary proteins and produce dry, harsh bitterness; under-steeping leaves flavor compounds unmobilized. These two failure modes — over- and under-extraction — apply to every steeping context. In pastry and sauce work, dairy is steeped with aromatics to build flavored bases: cream steeped with split vanilla pods for crème anglaise; milk steeped with tea leaves, lavender, or whole spices before being used in cake batters; stock steeped with aromatics off-heat after a preliminary cooking period. The distinction between a hot steep and a simmer is temperature: a simmer (around 90°C) involves visible convection bubbles and drives off volatile compounds; a steep (75–85°C range for most dairy applications) preserves them. Cold steeping — immersion in cold or room-temperature liquid over extended time — is increasingly used to extract delicate floral and fruity top-notes that hot water destroys. Cold-steeped jasmine tea, cucumber water, and cold-brew coffee are commercial-scale examples. The physics: at low temperature, extraction kinetics slow dramatically, demanding 8–24 hours rather than minutes, but the resulting extract contains fewer bitter tannins and more fragile aromatics. The line between 'steeping' and 'infusing' is thin and somewhat conventional — both describe flavor extraction by soaking. In common kitchen usage, 'steep' tends to appear with tea, hot liquids, and short durations; 'infuse' tends to appear with aromatics in oil, cream, or alcohol and implies more deliberate flavor transfer. In technical writing, the terms are often interchangeable.

Temperature precision matters
The correct steeping temperature is not 'boiling water.' Different teas require different temperatures — green and white teas at 70–80°C, oolongs at 85–90°C, black teas at 93–95°C. Pouring boiling water directly over green tea scalds the leaves, extracting bitter compounds and destroying amino acid-derived umami sweetness (L-theanine). A thermometer or a brief rest after boiling transforms the result.
Steep vs. simmer in stock-making
Stocks are often finished by removing from heat and steeping aromatic additions (a sachet of fresh herbs, a bundle of parsley stems, a handful of dried mushrooms) for 5–10 minutes off heat. This avoids the bitterness that prolonged simmering of fresh herbs produces while still extracting their essential oils.
Dairy steeping: the scald-and-steep method
Classic pastry method: bring milk or cream to just below a simmer (scalding point, ~82°C), add aromatics, remove from heat, cover, and steep for 20–60 minutes. Covering prevents evaporation and maintains temperature. This is the standard technique for vanilla custard bases, spiced pastry creams, and flavored panna cottas.
