Definition
Infusion is the controlled extraction of soluble flavor compounds — volatile aromatics, polyphenols, essential oils, pigments, and organic acids — from a solid aromatic into a carrying liquid, then removing the solid before use. The liquid (water, milk, cream, oil, vinegar, alcohol, stock, or syrup) becomes the vehicle; the aromatic (vanilla pod, whole spices, herb stems, dried fruit, roasted coffee, smoked wood) is the donor. The two are brought into contact for a precisely managed duration, then separated by straining, so that only the soluble essence remains. Infusion divides cleanly into two regimes — hot and cold — governed by different extraction kinetics: **Hot infusion** (most common): the liquid is heated to a target temperature, the aromatic is added, and extraction begins rapidly. Milk or cream heated to just below a simmer and steeped with vanilla, bay, or cardamom is the backbone of custards, crème brûlée, and panna cotta. Cream infused with lemongrass, kaffir lime leaf, or fresh ginger appears in Thai-inflected desserts. The critical variable is temperature control — boiling cream destroys delicate aromatics; scalded milk infused with a split vanilla pod at 80°C (175°F) for 20–30 minutes extracts significantly more vanillin than a brief steep at 95°C. Time and temperature are inversely related: a lower temperature demands longer contact. **Cold infusion** (extraction at or below room temperature): aromatic compounds dissolve into the liquid slowly over hours or days with minimal heat damage to delicate volatiles. Cold-brew coffee is the paradigmatic example — coarsely ground coffee steeped in cold water for 12–24 hours produces a low-acid, concentrated extract quite different from hot-brewed coffee using the same beans. Cold-infused herb oils, cucumber water, and overnight chile oil all follow the same logic: time replaces heat as the driving force. Oil infusions occupy a special category. Because flavor compounds differ in polarity, some (fat-soluble terpenoids in rosemary, thyme, and citrus peel) extract better into oil than water. Warm-oil infusion (herbs in olive oil held at 60°C/140°F for 1–2 hours) is standard for flavored oils, though food safety demands the infused oil be refrigerated and used within a week (Clostridium botulinum risk in low-acid, low-oxygen oil environments). Alcohol infusions — the basis of liqueur production, vanilla extract, and kitchen tinctures — exploit ethanol's dual polarity, which extracts both water-soluble and oil-soluble aromatics simultaneously. This is why vodka or neutral spirits extract a broader flavor spectrum from vanilla beans than either water or oil alone.

Infusion vs. decoction
An infusion keeps the aromatic in contact with hot (but not necessarily boiling) liquid and then strains it. A decoction actively simmers or boils the aromatic to extract more robustly, typically used for hard materials (roots, bark, dried berries) whose cell walls resist extraction at lower temperatures. Most herbs and delicate spices are infused; roots like ginger and dried woody spices are often decocted.
Fat-soluble vs. water-soluble extraction
Cooks who want the full aromatic profile of an ingredient — for instance, the green grassy top-notes of fresh basil as well as its deeper anise undertones — sometimes combine both a water infusion and an oil infusion and blend them, since neither medium alone captures everything.
Food safety for oil infusions
Herbs and aromatics in oil support anaerobic bacterial growth. Garlic-in-oil is particularly high-risk. Infused oils should be refrigerated and consumed within 4–7 days, or the botanicals should be removed immediately after infusion and the oil used within 1–2 weeks. Commercial infused oils are acidified or heat-treated.
