Impasto

The Italian term for the act and art of making dough — the deliberate process of combining and working ingredients to develop the correct balance of strength, extensibility, and elasticity for the intended bread or pasta.

/im-PAH-stoh/Italian, from impastare (to knead, to work into a paste); rooted in pasta (paste, dough), from Latin pasta; also gives the English word 'impasto' in painting (thick application of pigment).

Definition

In Italian baking and pasta-making traditions, impasto refers simultaneously to the dough itself and to the process of making it — the verb impastare means to mix and knead, and the noun impasto is the resulting mass. The concept goes well beyond simple mixing: the impasto process is the foundational act that determines the final character of the bread or pasta. For pizza napoletana, impasto means a specific sequence of hydration, salt timing, and extended hand-kneading or spiral-mixer work to develop a strong, extensible gluten network that can both hold fermentation gases and stretch thin without tearing. For pasta all'uovo (egg pasta), impasto means working egg yolks and semolina until the dough is smooth, coherent, and silk-like — a tighter, less hydrated network than bread dough. For focaccia genovese, impasto includes deliberate folding stages during bulk fermentation (a tecnica called 'pieghe') that build structure gently in a high-hydration dough without degassing it. The science underlying impasto is protein chemistry: gluten is formed when the proteins glutenin (long chains, providing strength) and gliadin (shorter coiled proteins, providing extensibility) hydrate and bond into the viscoelastic network called gluten. The impasto process — mixing, kneading, time, and temperature — determines how that network develops. Italians describe optimal impasto in terms of its 'incordatura' (stringing-up), the moment when the dough becomes smooth, taut, and begins to resist tearing — evidence that gluten strands have aligned and cross-linked. The ideal balance of forza (strength) and estensibilità (extensibility) differs for every product: pizza needs high extensibility to stretch thin; bread needs high strength to retain gas; fresh pasta needs enough elasticity to sheet without tearing while being tender to the tooth when cooked.

In use

The pizzaiolo spent twenty minutes on the impasto alone, folding and pressing the dough until it reached incordatura — smooth, slightly shiny, snapping back slowly when stretched rather than tearing.

Impasto in pizza tradition

The Disciplinary Document of the Associazione Verace Pizza Napoletana (AVPN) specifies the impasto procedure in precise terms: water first, then 10% of the salt dissolved in it, then flour added gradually, then remaining salt, then yeast. This order controls gluten development and yeast hydration. Mixing by hand is preferred for small batches; spiral mixers at low speed are permitted for larger productions. Minimum mixing time is 20 minutes.

Impasto for pasta vs. bread

Pasta impasto typically targets a much drier, stiffer dough (around 55–65% hydration by flour weight) compared to bread doughs (65–80%+). This low hydration produces tight, smooth gluten that can be sheeted thin without collapsing, and that firms up on cooking rather than becoming gummy. The kneading time is shorter — 8–10 minutes — because the tighter structure develops faster.

The windowpane test

Italian bakers use a stretch test (analogous to the 'windowpane test' in English baking literature) to judge when impasto is complete: a small ball of dough is stretched slowly between the fingers. When it stretches to a translucent membrane without tearing — you can see light through it — the gluten network is developed enough to proceed to fermentation.
