Tyrosine Crystals

Hard, gritty white crystals that form in long-aged cheeses when the amino acid tyrosine precipitates out of solution — a hallmark of extended, high-quality aging.

Definition
Tyrosine crystals are deposits of the free amino acid L-tyrosine that accumulate on the surface and within the paste of extensively aged hard and semi-hard cheeses. As proteolysis — the enzymatic breakdown of casein proteins — proceeds over months and years, peptide chains are cleaved into individual amino acids. Tyrosine, being relatively insoluble at the water activity levels found in mature cheese, reaches its solubility threshold and nucleates into monoclinic crystals. These appear as white or off-white, chalky specks or clusters, sometimes forming thick crusts near the rind or radiating outward from the interior. They are completely harmless and are widely regarded as a positive quality indicator signaling long aging and complex proteolysis. Tyrosine crystals are typically distinguished from calcium lactate crystals, which are softer, more powdery, and tend to bloom on the exterior surface of younger cheeses as a result of temperature fluctuation during distribution. Under polarized light, tyrosine crystals show characteristic birefringence and needle-like or star-burst morphology. Sensory experience of tyrosine crystals is the pleasant 'crunch' associated with aged Parmigiano-Reggiano (24+ months), aged Gouda (18+ months), Comté (24+ months), aged Cheddar, Pecorino Romano, and Mimolette. The presence and density of tyrosine crystals is used informally by affineurs as a proxy for aging time and proteolytic depth, though no regulatory standard defines crystal quantity as a quality parameter.

Tyrosine vs. calcium lactate
The two crystal types are frequently confused. Calcium lactate crystals form on the exterior of younger cheeses (often Cheddar) exposed to temperature swings and have a smoother, whiter appearance. Tyrosine crystals form in the interior paste and on cut surfaces of long-aged cheeses, are harder and crunchier, and appear more yellowish-white.
Not a defect
Uninformed consumers sometimes mistake tyrosine crystals for mold or contamination. In premium retail and restaurant contexts, servers should proactively note that the crystals are a sign of exceptional aging, not spoilage.
Etymology as mnemonic
Because tyrosine was literally named after cheese (Greek tyros), the crystals offer a neat full-circle story useful in cheesemonger education: the amino acid found in aged cheese is named for the food it comes from.
