Croissant Dough (Détrempe to Beurrage)

The classic croissant ratio places a butter block (beurrage) at roughly 25–33% of the total dough weight, laminated through 27 layers of alternating dough and butter via three double folds.
A croissant is a laminated yeast dough produced by enclosing a solid block of high-fat butter (beurrage) inside a lean, yeasted dough base (détrempe) and repeatedly folding and rolling to create alternating strata. Unlike puff pastry, the détrempe contains yeast, butter, sugar, and milk, making it enriched and already tender; the beurrage adds the laminar structure that produces the characteristic honeycomb crumb and shattering crust. The ratio of détrempe to beurrage governs layer definition, richness, and lift: too little butter and layers merge into a brioche-like crumb; too much and butter breaks through the dough during rolling.
The proportions

- Détrempe (base yeast dough) — Typically: bread flour + milk + sugar (8–10%) + salt (2%) + yeast (2–2.5% fresh) + a small amount of butter (4–6%) and sometimes egg yolk; the small butter content keeps it extensible without tearing during lamination
- 1 part (e.g. 500 g)
- Beurrage (butter block) — Must be a high-fat, low-moisture 'dry' or 'tourage' butter with ≥84% fat — standard supermarket butter (80% fat, ~16% water) creates excess steam and soggy layers; European-style butter or a dedicated beurrage de tourage is standard
- ~55–60% of flour weight
- Milk (in détrempe) — Contributes sugars for Maillard browning and richens the dough without adding yolk's emulsifying fat
- 8–10% of flour weight
- Sugar (in détrempe) — Feeds the yeast, promotes crust color, and adds subtle sweetness distinct from bread
Method
Day 1 — Mix the détrempe: combine flour, milk, salt, sugar, yeast, and small amount of butter; mix until a smooth, developed dough forms (10–12 min); chill flat in the fridge overnight. Day 2 — Beat the cold butter into a flat, pliable 20 cm square (beurrage); it must be cold but malleable (around 14–16°C), not hard or it will shatter. Encase the beurrage in the rolled détrempe ('package' fold). Perform three double folds (tour double / book fold): roll to a long rectangle, fold in quarters, chill 30–60 min, repeat × 2. This produces 4³ = 64 layers (after resting; start count from a 2-layer package). Chill overnight. Day 3 — Roll to 4–5 mm, cut triangles, roll from base to tip, curve, proof at 26–28°C for 2–3 hours, brush with egg wash, bake at 185–195°C for 18–22 min.
Tips
- Both the beurrage and détrempe must be at the same pliability (14–16°C) when beginning lamination — if the butter is colder it will shatter through the dough; if warmer it will smear and merge with the layers.
- Work cold and work fast: return the dough to the refrigerator the moment it starts to feel soft or resists rolling. Overheated lamination produces a greasy, dense crumb.
- Do not skip resting between folds — the gluten in the détrempe needs to relax or it will spring back and tear.
- Steam in the oven for the first 5 minutes (inject steam or place a pan of boiling water) helps develop oven spring before the crust sets, producing taller, more open croissants.
- Proof croissants until they wobble visibly when the tray is shaken (the jiggle test) and appear visibly puffed. Under-proofed croissants have a dense crumb; over-proofed ones collapse during baking.
- Use tourage (dry) butter with at least 84% fat. In countries where this is hard to source, clarify the moisture from regular butter or use a high-quality European-style butter and compensate by working colder.
Variations
- Pain au chocolat (chocolatine)
Same dough and lamination ratio; cut as rectangles rather than triangles, enclose a bâton of dark chocolate (64–70% cocoa), roll rather than curl
- Pain aux raisins
Same dough rolled flat, spread with crème pâtissière, scattered with rum-soaked raisins, rolled into a log, sliced into rounds, proofed and baked
- High-butter (1.5:1) croissant
Used by some artisan boulangeries for a richer, more pronounced honeycomb; requires more precise temperature control as the extra fat increases tear-through risk
- Danish pastry dough (wienerbrød)
Similar lamination ratio but détrempe is richer in eggs and sugar; used for Danish pastries, bear claws, and kringle; butter block usually 25–30% of total weight
- Whole-wheat croissant
Substitute 20–30% of bread flour with whole-wheat in the détrempe; increases water absorption ~5%, adds a nutty depth, slightly reduces layering definition

Layer count and the fold system
A standard three double folds (tours doubles) applied to a détrempe-beurrage package produces 4³ × 2 = 128 distinct layers of butter. In practice, some layers merge during proofing (as yeast activity pushes the honeycomb open), and the goal is not the raw layer count but the balance between distinct laminar layers and open crumb. Applying too many folds (5+ turns) causes layers to thin beyond the point where they hold their definition — the butter incorporates into the dough and the result is brioche-textured rather than laminated.
Why the beurrage ratio matters
At 1 part butter to 2 parts dough (33% of total weight), the butter is substantial enough to create clearly defined, shatteringly crisp layers while remaining mechanically manageable. Drop below ~25% and the croissant tastes more like an enriched bread roll with faint layering. Exceed ~40% and you approach puff-pastry territory — the structure becomes so rich that the yeast crumb is lost and the pastry requires longer proofing to avoid collapse. The 2:1 ratio is the practical sweet spot validated by generations of French boulangerie practice.
