A balanced 1:1:1 base of salt, sugar, and spice that drives bark formation and controls moisture loss during low-and-slow cooking.
A dry rub is a spice-and-salt mixture applied directly to raw meat before smoking or grilling. The salt percentage is the critical variable: it draws moisture to the surface via osmosis, which then redissolves the rub into a brine and is reabsorbed, seasoning deeply. Sugar caramelizes and carbonizes under heat to form the crust (bark). Aromatics provide flavor complexity without altering the fundamental chemistry.

Method
Combine all ingredients by weight in a bowl and whisk thoroughly to break up any sugar clumps. Pat meat dry with paper towels before applying — moisture on the surface dilutes the rub and delays bark formation. Apply rub generously (roughly 1 tablespoon per pound / 500 g of meat) and press firmly to adhere. Rest uncovered in the refrigerator for at least 1 hour; overnight (8–12 hours) allows the salt to pull moisture out and reabsorb, functioning as a dry brine. Cook low and slow at 225–275°F (107–135°C) until the bark sets firm and darkens.
Tips
- Weigh ingredients — volume measurements are unreliable because salt crystal size varies dramatically between kosher, table, and sea salt.
- The optimal salt application rate for a 24-hour dry brine is roughly 0.5–0.75% of meat weight by total salt mass.
- Sugar content above 25% of the total rub weight risks burning before internal temperature reaches safe zones on hot cookers — dial back for direct-heat grilling.
- Apply rub at least 1 hour before cooking or the night before; never apply and cook immediately, or you pull moisture out without giving it time to reabsorb.
- Store unused rub in an airtight jar away from light and heat; sugar absorbs humidity and can cause clumping within a week if stored poorly.

Why salt percentage drives everything
The salt fraction is not merely about flavor — it is the architectural variable of a dry rub. At application, salt dissolves in the thin moisture layer on the meat surface, creating a concentrated brine that penetrates muscle fibers via osmosis. Below about 0.5% salt-to-meat-weight, penetration is too shallow for uniform seasoning. Above 1.5%, the meat risks becoming unpleasantly saline, especially for leaner cuts. Sugar and aromatics are secondary; they exist in the ratio after salt has been calibrated correctly.
Bark formation chemistry
Bark — the dark, mahogany exterior crust prized in competition and pit barbecue — forms through two overlapping reactions: the Maillard reaction (proteins and reducing sugars browning above 280°F/138°C) and sugar caramelization (above 320°F/160°C). Moisture on the surface suppresses bark by keeping temperatures below these thresholds; hence the importance of drying the meat before rub application. Fat rendering during the cook also carries fat-soluble aromatics into the bark, deepening complexity.
