Dum Biryani Rice-to-Water (1:1.25 Parboil)

Parboil aged basmati in 1:1.25 salted water to exactly 70% doneness — the rice then finishes in sealed dum steam from the layered meat and aromatics below.
Dum biryani — whether Hyderabadi kacchi, Lucknawi pakki, or Kolkata-style — is built on a two-stage rice cooking technique. In stage one, aged long-grain basmati is parboiled in a large volume of generously salted, spiced water (with whole spices, bay leaves, and sometimes vinegar) at a rolling boil for exactly 5 to 7 minutes, until each grain is approximately 70% cooked: opaque in the centre with a thin translucent outer ring. The grains are immediately drained. In stage two (dum), the partially cooked rice is layered over marinated meat or vegetables in a sealed heavy pot, and residual steam from the meat's moisture and a small amount of extra liquid (saffron milk, ghee) finishes the rice. The sealed pot and low heat prevent further water loss, so the parboil ratio must be deliberately conservative — if the rice were fully cooked before dum, it would collapse to mush under the prolonged steam.

Method
Wash and soak basmati 30 minutes. Bring a large pot of water (or measured 1.25 parts water in absorption method) to a rolling boil; add salt heavily (water should taste like pasta water), whole spices, and bay leaves. Add soaked, drained rice. Boil 5–7 minutes — check at 5 minutes by biting a grain: it should bend without snapping, centre still chalky. Drain immediately in a colander. In a heavy-bottomed pot (handi or Dutch oven), spread a layer of the marinated meat or vegetables, cover with half the parboiled rice, sprinkle fried onions and mint, add remaining rice, drizzle saffron milk and ghee. Seal the lid with atta dough or foil. Cook on very low heat (or a tawa/heat diffuser) for 25–45 minutes depending on the protein. Rest sealed for 10 minutes, then open and fold gently from the base.
Tips
- Aged basmati is essential — new-crop rice has high moisture content and will overcook in dum; aged rice (1–2 years) is drier and elongates dramatically.
- The parboil water must be heavily salted — the grain surface absorbs salt in those 5–7 minutes; unseasoned parboil water produces bland rice that no amount of final seasoning can correct.
- Soaking before parboiling is not optional — it aligns the grain's moisture content so the outside cooks at the same rate as the interior; skip it and the surface becomes soft before the centre reaches 70%.
- A good seal is the crux of dum: use atta (whole-wheat dough) rolled into a rope and pressed around the lid edge, or wrap with two layers of foil weighed down; any steam escape dries the rice.
- A tawa (flat iron griddle) or heat diffuser under the pot on the stovetop prevents direct-flame hot spots that burn the bottom layer.
- Fried crispy onions (birista) layered between rice tiers are not decoration — they soften and release residual moisture into the steam environment.
Variations
- Kacchi biryani (Hyderabadi raw-meat method)
Raw marinated meat placed under parboiled rice; longer dum time (45–55 minutes) as meat cooks entirely in dum; tightest parboil — stop at 60–65% doneness
- Pakki biryani (Lucknawi pre-cooked method)
Meat fully cooked in gravy first; shorter dum time (20–25 minutes) as only rice needs to finish; parboil can reach 75% without risk of mush
- Kolkata biryani (with potato)
Potato halves parboiled separately and layered with the meat; hallmark is subtly sweetened, rosewater-scented rice; same 70% rice parboil

Layered paneer, cauliflower, peas; vegetables release less steam than meat so add an extra 3–4 tbsp water to the base before sealing

Notes
The 70% rule
The 70% parboil target is the central discipline of dum biryani. Undercooked at 60% and the rice will not absorb the final steam quickly enough — grains remain chalky in the centre. At 80% or more, the grain's starch network is already set and cannot soften further without collapsing into each other under the dum's heat and pressure. The visual indicator is a cross-section of the grain: it should show an opaque white centre roughly 30% of the diameter, surrounded by a translucent cooked layer.
Absorption vs. large-pot parboil
The 1:1.25 absorption ratio applies to a sealed-pot parboil used in some professional kitchens for precision: rice absorbs exactly that water and no more, reaching 70% when the pot runs dry (about 5 minutes). The traditional home and restaurant method uses a large pot of boiling water — the ratio is effectively irrelevant since the rice is timed, not absorption-limited. Both work; the absorption method is more consistent for those without a timer-calibrated eye.
