Dumpling Dough (Flour to Boiling Water to Cold Water)

100 g flour to 35 g boiling water to 25 g cold water — the half-hot-water method that makes Chinese dumpling wrappers tender yet strong enough to fold and pleat.
Chinese dumpling dough (for jiaozi, potstickers/guotie, and related wrappers) relies on a split-water technique in which some of the water is added boiling and some cold. The boiling water gelatinizes a portion of the starch in the flour, which weakens gluten formation in those areas and produces a soft, cohesive, slightly translucent dough that stretches without tearing when rolled thin. The cold water then activates remaining gluten strands, providing enough elasticity for the wrapper to hold a pleated seal under boiling, steaming, or pan-frying without splitting. The resulting dough is softer and more pliable than a pure cold-water dough and far more workable than a pure hot-water dough (which would have too little elasticity to pleat). Total hydration of approximately 60% is higher than most European pasta doughs, reflecting the lower protein content of Chinese-style all-purpose flour.
The proportions
- 100 g
- All-purpose flour (medium protein, 10–11%) — Chinese zhongji mianfen (medium-strength flour) is ideal; standard Western all-purpose works well. High-protein bread flour produces a chewier, tougher wrapper. Low-protein cake flour produces a wrapper too delicate to pleat.
- 35 g
- Boiling water (100 °C) — Added first while stirring — gelatinizes starch granules, creating a moist, extensible paste matrix that inhibits full gluten formation and softens the final dough.
- 25 g
- Cold water — Added after the dough has cooled enough to handle (~2–3 minutes); reactivates remaining ungelatinized starch and promotes gluten development in those areas, giving elasticity for pleating.
- 1–2 g
- Fine salt — Optional; salt tightens gluten and seasons very slightly. Some Cantonese recipes omit it entirely.
Method
Place flour (and salt if using) in a large heatproof bowl. Add boiling water all at once while stirring vigorously with chopsticks or a fork — the dough will look shaggy and steamy. Allow to cool for 2–3 minutes, then add cold water and mix until combined. Turn out and knead by hand 5–8 minutes until smooth and elastic. The dough should be soft but not sticky. Cover with a damp cloth or plastic wrap and rest 20–30 minutes minimum — the rest is critical for gluten relaxation. After resting, divide into logs and pinch off portions (about 10 g each for standard jiaozi). Roll each portion into a thin disc (about 3 mm in the centre, 1–2 mm at the edges) using a small rolling pin, rotating the disc between passes to achieve a thinner edge. Fill, fold, and pleat immediately.
Tips
- The boiling water must be truly boiling — water at 70–80 °C will not gelatinize enough starch, and the dough will be less tender than intended.
- Do not skip the rest: resting allows starch to continue absorbing water and gluten to fully relax, making rolling dramatically easier.
- Roll the wrapper thinner at the edges than the centre — a thicker centre supports the filling while a thin pleatable edge folds without cracking.
- If the dough springs back when rolled, it needs more rest time — cover and wait another 10–15 minutes.
- For pan-fried guotie (potstickers), a slightly stiffer dough (reduce cold water by 5 g) holds up better to the initial fry before the steam phase.
- Keep unused dough covered at all times — even brief air exposure dries the surface and causes cracking during rolling.
- Dust the work surface sparingly with cornstarch rather than flour to prevent sticking without altering the wrapper's texture.
Variations
- All cold-water dough (for chewier wrappers)
60 g cold water per 100 g flour, no hot water — produces a chewier, more elastic wrapper with a slight translucency; preferred in some northern Chinese styles for boiled jiaozi. Requires longer kneading (10+ minutes).
- All hot-water dough (Tang mian / 烫面)
60 g boiling water per 100 g flour — dough is extremely soft and easy to roll thin but has minimal elasticity, making it hard to pleat; used for steam-only dumplings such as har gow (with a different flour base) and some baozi skins.
- Stand-mixer method
Same ratio — use the dough hook at low speed; pour boiling water in with the mixer running, then add cold water. Total mix time 5–7 minutes. Produces a slightly more uniform gluten development than hand mixing.
- Gyoza wrappers (Japanese adaptation)
Often a pure cold-water dough at 50–55% hydration for a thinner, chewier wrapper suited to pan-frying; some recipes use a small proportion (10–15 g per 100 g) of boiling water for a slight softness.
Related ratios
The fully starch-based counterpart — no gluten flour at all, producing a completely translucent wrapper; requires the all-hot-water method and is more fragile.
Italian enriched pasta dough achieves similar pliability through fat and egg protein rather than partial starch gelatinization.
- Wonton Dough Ratio
Wonton wrappers use a similar split-water approach but lower total hydration (~50%) and sometimes egg for a thinner, more delicate sheet suited to boiling in soup.

Starch gelatinization and why temperature matters
When boiling water hits flour, it raises the temperature above wheat starch's gelatinization point (~60–70 °C for wheat). Starch granules absorb water, swell, and burst, releasing amylose and amylopectin into a gel. This gel disrupts the normal flour-and-water gluten network — gluten proteins glutenin and gliadin can't form long, cross-linked chains through a starch gel. The result is a dough with reduced elasticity in those areas, which translates to a wrapper that stretches easily without snapping back and bites tenderly in the mouth rather than chewing like a rubber band. The cold water added afterward allows some ungelatinized starch and exposed proteins to form a normal gluten network — providing just enough elasticity to hold a pleated seal under cooking stress.
