Gelatin Bloom (Percentage by Liquid Weight)

Use 0.5–1% gelatin by liquid weight for a soft, barely set panna cotta and 2% for a firm, sliceable terrine — with leaf-to-powdered conversion depending on bloom strength.

Gelatin is a hydrocolloid derived from collagen that forms a thermoreversible gel upon cooling. Its concentration is expressed as a percentage of the liquid weight it sets: 1% means 1 g gelatin per 100 g liquid. Bloom strength — the gel firmness of a hydrated gelatin measured in grams — is equally important: standard powdered gelatin in the US runs approximately 225 Bloom; silver leaf gelatin is typically 160 Bloom; gold leaf is 200 Bloom. Because Bloom strength affects how much gelatin you need to achieve a given firmness, formulas must account for both percentage and Bloom when converting between types.

Method

Measure gelatin by weight, not volume. Sprinkle powdered gelatin over 5× its weight in cold water and let stand 5–10 minutes until fully bloomed (it swells to a rubbery mass). Heat the target liquid to 60–80 °C. Add the bloomed gelatin and stir gently until completely dissolved — do not whisk vigorously as bubbles are trapped in the gel on setting. Pour into moulds or containers. Refrigerate at 4 °C: soft 1% sets firm in 2–3 hours, 2% sets in 1–2 hours. For leaf gelatin: soak individual sheets in cold water for 5 min until pliable, squeeze out excess water, dissolve in warm liquid. Conversion: one standard sheet (silver, 2.5 g, 160 Bloom) ≈ 2 g of 225 Bloom powder.

Tips

  • Always bloom gelatin in cold liquid first — adding dry gelatin directly to hot liquid creates lumps that never fully dissolve.
  • Never boil a gelatin solution: temperatures above 90 °C for more than a few minutes permanently hydrolyse the collagen chains and the gel will never set.
  • Acidic ingredients (fresh pineapple, papaya, kiwi, figs) contain proteases (bromelain, ficin) that digest gelatin; always cook or use canned versions of these fruits in gelatin desserts.
  • Gold leaf gelatin (200 Bloom) is slightly stronger than silver (160 Bloom): use 20% less gold than silver to achieve the same set.
  • Kosher and vegan applications use agar, carrageenan, or pectin rather than animal-derived gelatin — the percentages and textures differ considerably.

  • Panna cotta (soft pour)

    0.5–0.8% gelatin; set is barely self-supporting — the cream quivers when the plate is tapped; too much gelatin yields a rubbery, bouncy result

  • Aspic and savoury jellied stock

    0.8–1.2% total gelatin (including collagen extracted from bones); a clean 1% stock sets to a tender table jelly

  • Bavarois / Bavarian cream

    0.8–1% gelatin in the base custard before whipped cream is folded in; the dilution from the cream puts the final set at roughly 0.5%

  • Jelly/jello table set

    1.5–2% gelatin in sweetened water or juice; firm enough to cut into cubes

  • Charcuterie terrine en gelée

    2–2.5% gelatin in reduced stock; must hold a clean slice at room temperature

  • Marshmallow base

    3–4% gelatin whipped with hot sugar syrup; a very high concentration that sets to a chewy foam

Bloom strength and conversion

Bloom strength (expressed in grams) measures how much weight is needed to depress a standard gelatin gel by 4 mm. A 250 Bloom gelatin is noticeably firmer at 1% than a 150 Bloom gelatin. When recipes cite 'Knox' powder (typically 220–225 Bloom) or European silver leaf (160 Bloom), the amounts are not interchangeable. The correction factor is: grams of alternative gelatin = grams of reference gelatin × √(Bloom_reference / Bloom_alternative). For most kitchen purposes, the rule of thumb is: 1 sheet silver leaf ≈ 2 g powder (225 Bloom); 1 sheet gold leaf ≈ 2.5 g powder.

Thermoreversibility vs. agar

Gelatin melts at approximately 30–35 °C, just below body temperature — which is why well-made aspic or panna cotta dissolves on the tongue. This thermoreversibility is both a virtue (the gel can be remelted and reset) and a limitation (it cannot be served at room temperature in warm climates). Agar, by contrast, melts at around 85 °C and sets at 35–40 °C — a much wider working window for room-temperature service.
