Panna Cotta (Cream to Gelatin)

5 g powdered gelatin per 500 ml heavy cream yields a barely-set, trembling panna cotta that just holds its unmolded shape.
Panna cotta ('cooked cream' in Italian) is a Piedmontese dessert in which heavy cream is sweetened, gently heated, and set with a small amount of gelatin. The cream-to-gelatin ratio is the defining technical variable: too little gelatin and the cream slumps; too much and it bounces like rubber. The canonical Piemontese standard is 5 g gelatin per 500 ml cream — producing the famous trembling wobble that distinguishes an artisan panna cotta from a firmer, mass-produced version.
The proportions
- 500 ml
- Heavy cream (35–40% fat) — Higher fat content contributes body and slows syneresis; do not substitute half-and-half without adding an extra 0.5 g gelatin
- 5 g (standard) to 7 g (unmolded)
- Powdered gelatin — 1 standard sachet = 7 g; for 5 g use a kitchen scale — the difference is perceptible
- 60–80 g
- Granulated sugar — Sugar slightly strengthens the gel by competing for water with the gelatin network; reduce sugar and increase gelatin by 0.5 g to compensate
- 30 ml
- Cold water (for blooming) — Always hydrate gelatin in cold water before adding to warm cream
Method
Sprinkle gelatin over cold water and let stand 5 minutes until fully bloomed and spongy. Combine cream and sugar in a saucepan and heat gently to 80 °C — steam will rise but do not boil. Remove from heat, add bloomed gelatin, and whisk until completely dissolved. Flavor at this stage (vanilla, grappa, citrus zest). Strain through a fine sieve into a jug, cool to 30 °C, then pour into lightly oiled molds or serving glasses. Refrigerate at least 4 hours, ideally overnight.
Tips
- Never boil the cream after adding gelatin — sustained boiling denatures protein-gelatin bonds and introduces air bubbles.
- Taste the mixture at 30 °C before pouring; flavors mute slightly on chilling, so season a touch stronger than you think necessary.
- Oiling molds very lightly (a thin brush of grapeseed oil, wiped almost dry) is the only reliable release agent — butter's water content can cause sticking.
- To remove bubbles before setting, pass a cook's blowtorch over the surface of poured glasses for 1–2 seconds.
- Altitude affects gel strength only marginally for gelatin (unlike baked goods), but high humidity kitchens may produce a slightly looser set.
- The classic Piedmontese accompaniment is bitter caramel sauce or fresh berry coulis — their acidity does not affect the set gel once poured on top.

Set directly in serving glasses for the most delicate wobble; no need to compensate for unmolding stress

Lightly oil molds with a neutral oil; refrigerate 6 hours minimum; unmold onto chilled plates
- Buttermilk or yogurt panna cotta
Replace 150 ml cream with full-fat yogurt or buttermilk for acidity; acid slightly weakens gelatin — increase by 0.5 g to compensate
- Dairy-free (coconut cream)
Full-fat coconut cream (22–25% fat) sets at the same ratio as dairy but firms slightly faster; reduce gelatin by 0.5 g to preserve tremor
- Agar alternative (1 g agar : 500 ml cream)
Agar sets firmer and at room temperature; result is opaque with a cleaner break — not a direct substitute for gelatin's melting mouthfeel
- Chocolate panna cotta
Add 80 g 70% dark chocolate — the cocoa butter and solids add body, allowing a reduction to 4.5 g gelatin per 500 ml cream

The wobble is the point
Piedmontese cooks judge panna cotta by its tremor. The dish originated in the Langhe hills of Piedmont — possibly in the early 20th century, though it only achieved widespread recognition in the 1990s. Traditional recipes use heavy cream alone, no milk, and no cream-lightening substitutions. The minimal gelatin load is deliberate: the result should melt the instant it touches the tongue, releasing flavor in a way that a firmer set never can. In restaurants, panna cotta set in the glass avoids the unmolding risk and permits even lower gelatin (4–4.5 g), maximizing the trembling quality.
Sugar's role in gel strength
Sucrose competes with gelatin for free water in the mixture. At concentrations above 30% (w/w), sugar meaningfully stiffens the gel — meaning a very sweet panna cotta can use fractionally less gelatin without losing structure. Conversely, a low-sugar or unsweetened savory panna cotta (e.g. goat cheese panna cotta) may need an extra 0.5 g gelatin per 500 ml to compensate for the lost structural sugar.
