Paneer Setting (Milk to Acid, 1L to 30–45ml)

Add 30–45 ml of acid (lemon juice, white vinegar, or yogurt whey) to 1 litre of whole milk heated to 90–95 °C to precipitate the casein curds for paneer.
Paneer is an acid-set fresh cheese made exclusively from whole cow or buffalo milk; it contains no rennet, no aging, and no salt in its base form. The coagulation ratio — acid to hot milk — governs curd formation. Too little acid leaves the milk partially curdled and grainy; too much acid causes over-tightening, producing a rubbery, crumbling paneer with pronounced sourness. The 30–45 ml range per litre accounts for variation in milk fat content and acid concentration: full-fat buffalo milk (6–7% fat) sits at the low end (30–35 ml) while lower-fat cow milk (3–4% fat) often requires 40–45 ml to fully separate. Lemon juice and white vinegar are the most common acids; yogurt whey produces a finer, softer curd with milder flavor.
The proportions
- 1 litre (1000 ml)
- Whole milk (3.5–7% fat) — Full-fat yields more and creamier curds; UHT milk produces acceptable paneer but curds are less cohesive; never use skim milk
- 30–45 ml
- Acid — lemon juice (preferred) OR white vinegar OR diluted citric acid (1 tsp in 2 tbsp water) — Lemon juice: mildest flavor, softer curd texture; white vinegar: neutral flavor, firmer curd (closer to 30 ml as it is more concentrated); citric acid solution: most consistent and neutral; yogurt whey: 80–100 ml per litre for very soft chenna
Method
Bring milk to 90–95 °C in a heavy pot over medium heat, stirring occasionally to prevent scorching. Remove from heat. Add acid in a slow, steady stream while stirring gently in one direction — do not whisk aggressively as this breaks up the curds. Observe: within 30–60 seconds the curds should separate cleanly, leaving pale greenish-yellow whey (ricotta-like white whey means the milk was too hot and the protein is denatured, not coagulated). If separation is incomplete after 90 seconds, add 5–10 ml more acid. Once separated, line a colander with a double layer of cheesecloth. Ladle curds in gently; do not pour (pouring breaks the curds into smaller pieces that are harder to press). Rinse with cold water to stop cooking and remove acid taste. Gather the cloth and squeeze gently. For soft paneer: press under 500 g weight for 20 minutes. For firm paneer: press under 2–3 kg for 30–45 minutes.
Tips
- The correct temperature for adding acid is 90–95 °C — not a rolling boil (100 °C), which over-denatures whey proteins and produces a grainy, rubbery texture, and not below 85 °C, which gives incomplete coagulation
- Rinse the curds under cold water immediately after straining: this stops the cooking, removes residual acid (which causes sourness), and firms the surface for pressing
- Press on a flat surface with a second cutting board or flat plate directly on top of the cloth-wrapped curd; pressing on a rounded surface produces an uneven paneer block that crumbles unevenly when cut
- Whey from paneer-making is highly nutritious (proteins, lactose, minerals) — use it as the liquid in bread dough, rice cooking, or soup stocks rather than discarding
- For extremely smooth paneer (restaurant style), pass the freshly pressed block through a fine sieve or process briefly in a food processor, then re-press — this eliminates graininess in the final cooked dish
Variations
- Chenna (unpressed)
Same coagulation ratio; curds are not pressed but kneaded while warm into a soft, crumbly fresh cheese used in Bengali sweets (rasgulla, sandesh, chum chum)
- Hung curd paneer blend
50% paneer, 50% hung yogurt (Greek-style) kneaded together; produces a more spreadable, creamy paneer for tikka stuffings and kebab mixtures
- Vinegar paneer (firmer)
White vinegar at 30 ml per litre produces tighter protein bonds and a more squeaky, elastic curd that holds up better in high-heat curries like palak paneer
- Lemon paneer (softer)
Fresh lemon juice at 45 ml per litre produces looser, more delicate curds ideal for shahi paneer and paneer tikka where a creamy texture is preferred
- Smoked or spiced paneer
Curds pressed with spices (nigella seeds, black pepper, chili flakes) pressed into the surface before the final press; paneer smoked briefly in a wok with rice and tea leaves
- Buffalo milk paneer
Higher fat content (6–7%) produces creamier, richer curds requiring less acid; pressing time can be reduced by 10 minutes due to better curd cohesion from extra fat

Acid type and curd character
The acid chosen affects more than flavor. Lemon juice contains citric acid and small amounts of ascorbic acid along with flavor volatiles; it produces a softer curd because citrate ions partially chelate calcium, moderating the rate of protein aggregation. White vinegar (acetic acid) acidifies more sharply with a tighter protein network and firmer curd. Citric acid dissolved in water is the most precise option, producing highly consistent results batch-to-batch with zero flavor contribution. Traditional households in Bengal use alum (phitkari) in a very small quantity as the coagulant for extra-white, firm chenna, though this is uncommon outside home use.
Paneer vs. chenna: the pressing distinction
Paneer is pressed chenna. Both begin with the same coagulation ratio; the divergence point is after straining. Chenna is kneaded while warm and stays soft and spreadable — it is the primary ingredient in Bengali sweets including rasgulla and sandesh, where its smooth, malleable texture is essential. Paneer is pressed under weight until firm and sliceable, then used in savory cooking. The same batch of curds can become either product depending entirely on what you do in the 30 minutes after straining.
