Hydration Percentage in Bread Baking

Hydration = (water weight ÷ flour weight) × 100; every 5% shift meaningfully changes how a dough handles and how the crumb opens.

The ratio of water to flour expressed as a baker's percentage, where flour is always 100% and every other ingredient is measured relative to it. Hydration is the single most consequential variable in bread baking: it governs gluten development rate, dough extensibility, crust thickness, crumb openness, and fermentation speed. A lean baguette runs 68–72%; a sourdough boule 75–80%; a ciabatta 80–90%; a pan focaccia 90–110%.

Method

Weigh all flour called for in the recipe. Divide total water weight by total flour weight and multiply by 100. To adjust hydration, recalculate water weight: target hydration % × flour weight ÷ 100. When working with sourdough starter (typically 100% hydration), count both the flour and water within the starter toward the formula totals. Mix, autolyse (20–60 min rest), then develop gluten through stretch-and-fold rather than kneading for wet doughs above 75%.

Tips

  • Never add all the water at once to a high-hydration dough — hold back 5–10% of the water ('bassinage') and incorporate it once the dough starts to come together, allowing you to adjust for flour variation.
  • Ambient humidity affects effective hydration: in a very humid kitchen, dough absorbs moisture from the air and may feel wetter than expected. Reduce water by 5 g if the dough is unexpectedly slack.
  • Autolyse (mixing flour and water, resting 20–60 min before adding salt and starter) dramatically improves extensibility in high-hydration doughs, reducing the gluten development work needed.
  • A wet dough is not a ruined dough — resist the urge to add flour. Use a lightly oiled or wet surface and a bench scraper instead of flouring your hands and board.
  • Score high-hydration loaves deeply (at least 1.5 cm) and at a shallow angle (30–45°) to allow oven spring; if the scoring is too shallow the loaf will burst unpredictably.

The baker's percentage system

Baker's percentage is a professional formula language in which every ingredient is expressed relative to flour weight, not as a fraction of the total batch. This allows a formula to scale up or down by simply multiplying all values by the same factor, and it makes dough comparisons immediate: two formulas can be compared at a glance by their hydration, salt %, and preferment % without knowing the batch size. Home bakers who switch to baker's percentages typically describe it as the point where bread baking became genuinely reproducible.

Practical effect of each 5% hydration increment

At 65%, a dough is smooth and easy to hand-knead. At 70%, it sticks slightly to hands but holds its shape well. At 75%, it requires stretch-and-fold rather than conventional kneading and benefits from an autolyse rest. At 80%, a bench scraper becomes necessary for shaping. At 85%, the dough flows on the bench and requires confident, decisive shaping moves. Each increment above 80% adds roughly 5–10 minutes of bench rest between folds and demands either a proofing basket or a pan for final proof.
