Prague Powder #1 must be applied at exactly 0.25% of the raw meat weight — no more, no less — for safe short-term curing.
Prague Powder #1 (also sold as InstaCure #1 or DQ Curing Salt) is a blend of 93.75% sodium chloride and 6.25% sodium nitrite, tinted pink to prevent confusion with plain salt. It is used for short-cured or cooked products — bacon, ham, hot dogs, corned beef, and any cured meat that will be cooked before consumption. The sodium nitrite inhibits Clostridium botulinum, fixes the characteristic pink color, and contributes the distinctive 'cured' flavor. The 0.25% rate is the legally prescribed and food-scientifically validated safe maximum for retail use in most jurisdictions.

Method
Weigh the raw meat precisely. Calculate 0.25% of that weight in grams — this is your Prague Powder #1 dose. Combine with the salt, sugar, and aromatics of your cure. Apply evenly to all surfaces and rub in thoroughly, or dissolve in brine. Cure in the refrigerator; do not exceed the maximum recommended time (typically 7 days for bacon, up to 14 days for whole hams). Cook or smoke before consumption.
Tips
- Never exceed 0.25% — at higher concentrations nitrite becomes toxic; always weigh, never measure by volume.
- Prague Powder #1 is for products that will be cooked; never use it for long air-dried charcuterie (use Prague Powder #2 for those).
- The pink dye is not the same as beet-based natural pink color — it is a safety marker. Store away from plain salt to avoid accidental substitution.
- Refrigerate curing meat below 4°C (40°F) throughout; nitrite inhibits botulism but does not eliminate the need for cold storage.
- At the prescribed rate, the finished product contains roughly 120–150 ppm ingoing nitrite — within the FDA/USDA-allowed range for cured meats.

The 0.25% rate is not arbitrary — it is calibrated to deliver approximately 156 mg of sodium nitrite per kilogram of meat, a concentration proven to suppress Clostridium botulinum spore germination under refrigeration conditions. The USDA permits up to 200 ppm ingoing nitrite (roughly 0.32% Prague Powder #1), but the industry standard of 0.25% provides a safety margin while staying well within legal limits. Commercial producers often use computerized injection systems to hit this figure precisely; home curers must use a digital scale accurate to 0.1 g.
Prague Powder #1 vs. #2 — which to use
The rule is simple: if the product will be cooked before eating, use #1 (nitrite only — it breaks down during cooking). If the product will be air-dried and consumed without cooking — salami, prosciutto, coppa, lonza — use #2 (nitrate + nitrite), which provides a slow-release reservoir of nitrite over weeks or months of curing. Never substitute one for the other.
