Prague Powder #2 is used at 0.25% of meat weight for long air-dried products, supplying both sodium nitrite and sodium nitrate for a slow-release cure over weeks to months.

Prague Powder #2 is a blend of sodium chloride (89.75%), sodium nitrite (6.25%), and sodium nitrate (4%), tinted pink. The nitrate component acts as a time-release reservoir: bacteria and enzymes in the meat slowly convert nitrate to nitrite over the long drying period, sustaining antimicrobial protection throughout a cure that may last weeks to a year. It is essential for uncooked, air-dried charcuterie where the meat temperature never reaches the threshold that would break down a nitrite-only cure.

Method

Weigh meat precisely. Calculate 0.25% of that weight — this is your Prague Powder #2 dose. Mix thoroughly with salt, sugar, and aromatics. For whole-muscle cuts (lonza, coppa, prosciutto-style), apply as a dry rub and cure refrigerated 1–2 days per 500 g, then hang to dry at controlled temperature (10–15°C / 50–60°F) and humidity (70–80% RH) for the prescribed drying period. For fermented sausages, mix into minced meat with starter culture, stuff, ferment, then smoke and dry.

Tips

  • Never use Prague Powder #2 for products that will be cooked — the nitrate component does not fully degrade during cooking and accumulates unnecessarily.
  • Drying environment is as critical as the cure ratio: temperature above 16°C (60°F) or humidity below 65% during initial drying can cause case hardening, trapping moisture and creating anaerobic pockets.
  • Always verify pH in fermented sausages with a calibrated pH meter — a drop to ≤5.3 is the critical control point proving botulism inhibition before the product leaves the danger zone.
  • Prague Powder #2 must not be substituted for Prague Powder #1; the nitrate it contains would deliver excess nitrite in a cooked product.
  • Storage: keep tightly sealed in a cool, dark location; nitrites degrade over time — replace stock after one year.

Why nitrate, not just nitrite

Sodium nitrite is unstable at room temperature over long periods — it breaks down within days. A prosciutto curing for 12 months cannot rely on the original dose of nitrite to still be active at month six. Sodium nitrate (NO₃) solves this: naturally occurring bacteria and enzymatic reduction convert it to nitrite (NO₂) on a slow schedule that tracks the pace of the cure itself. By the time the product is eaten, most of the nitrite has done its work and been converted to harmless nitric oxide and nitrogen compounds. This is why Prague Powder #2 is reserved exclusively for long air-dried products.

The critical safety gate for fermented sausages

For fermented products like salami, the FDA HACCP model requires that the pH drop to 5.3 or below within 3 days of fermentation beginning (at appropriate fermentation temperature), or that the product achieve a water activity of 0.92 or below. These two parameters — acid and water activity — work in concert with nitrite to create an environment where Clostridium botulinum cannot survive. Neither step alone is sufficient; all three controls must function together.
