Preferment to Final Flour Ratio

The percentage of a recipe's total flour that is pre-fermented, controlling fermentation speed, sourness, crust color, and shelf life.
The preferment-to-final-flour ratio — expressed as a baker's percentage — describes how much of the total flour in a bread formula has been committed to a preferment (levain, poolish, biga, or sponge) before the final mix. A higher percentage accelerates fermentation and deepens flavor; a lower percentage gives the baker more control over timing and a milder result. The figure is calculated as: (flour in preferment ÷ total flour in formula) × 100.

Method
1. Sum all flour in the recipe (preferment flour + final-dough flour). 2. Divide the preferment's flour weight by total flour. 3. Multiply by 100 to get the percentage. To set a target: multiply total flour by desired percentage to find how much flour goes into the preferment; the rest goes into the final dough. Adjust water in the final dough to account for water already bound in the preferment.
Tips
- Doubling the preferment percentage roughly halves bulk fermentation time at the same temperature — useful as a schedule lever.
- At percentages above 40%, pre-fermented flour begins to dominate gluten structure; monitor bulk carefully, as over-fermentation risks accelerate.
- The preferment percentage interacts with room temperature: in summer, drop the percentage; in winter, raise it to hit the same timeline.
- When converting a straight-dough recipe to a preferment formula, start at 20% and adjust timing from there.
- Record the preferment percentage alongside temperature and timing in every bake log — it is the single most powerful variable for reproducing results.

Slow, mild fermentation; longer bulk and proof times; good for schedule flexibility and gentle flavor; typical of some Scandinavian rye sponges
- Standard artisan range (20–40%)
Most French and Italian breads; balances flavor development with manageable timing; poolish and biga formulas typically land here
- High inoculation (50–70%)
English sponge-and-dough method; dramatically shortens final fermentation; flavor less complex but acceptable for enriched and sandwich breads
- Very high (80–100%)
Sometimes used in sourdough shortcut methods — the entire flour weight passes through levain; extreme tang; caution: very fast final fermentation
- Levain bread (10–25%)

The percentage as a scheduling tool
Professional bakers adjust preferment percentage season to season — lower in warm months to prevent over-fermentation, higher in winter to maintain consistent timing. A 5-percentage-point shift in preferment flour is roughly equivalent to a 1°C shift in bulk fermentation temperature in its effect on final proof time. Tracking both variables together is essential for replicable bread.
Effect on crust and crumb
Higher preferment percentages tend to produce deeper crust color (from residual sugars already consumed) and a more open crumb (from acid-mediated gluten relaxation). However, above ~50%, gluten strength may be compromised; bakers using very high percentages often compensate with stronger flour or autolyse techniques.
