Puff Pastry (Détrempe to Beurrage, 1:1 by Weight)

Classic puff pastry uses equal weights of lean dough (détrempe) and butter block (beurrage), building up to 729 layers through six single folds that expand 6–8× in height in the oven.
Pâte feuilletée (puff pastry) is the foundation of vol-au-vents, mille-feuille, and Beef Wellington — an unleavened laminated dough that rises entirely through steam. The détrempe is a lean, unenriched dough of flour, water, salt, and a small amount of butter (the beurre de détrempe, which aids pliability). The beurrage is a large block of high-fat butter encased in the détrempe and subjected to six single folds (tours simples), each of which triples the layer count: 2 → 6 → 18 → 54 → 162 → 486 → 729 layers of butter. During baking, water in the butter converts to steam, forcing apart each paper-thin dough layer and producing the characteristic high lift and hundreds of crisp, light strata.
The proportions

- Détrempe (lean base dough) — Typically: 500 g flour + 250 g water (50% hydration) + 10 g salt + 50 g melted butter; the small butter addition keeps the dough supple without shortening the gluten needed to hold laminar layers

- Beurrage (butter block) — Tourage or 'dry' butter with ≥84% fat is strongly preferred; standard 80% butter produces excess steam that can rupture layers; some professionals use a mix of butter and a small amount of flour (10%) in the beurrage to make it more pliable and reduce tear-through at the 1:1 ratio

- Water (in détrempe) — Ice water reduces initial gluten activity; the water also migrates slightly into the beurrage during folding, contributing to the steam that creates lift

- Salt (in détrempe) — Strengthens gluten in the lean dough, which must support the weight of a substantial butter block without tearing during rolling
Method
Day 1 — Mix détrempe: combine flour, salt, water, and melted butter; mix until just combined (do not over-develop gluten). Score the top with a cross, wrap, and rest in the fridge 1–2 hours. Prepare beurrage: beat cold butter into a 20 × 20 cm square, maintain at 14–16°C. Encase beurrage in the rolled détrempe (envelope fold). Perform tour 1: roll to 60 × 20 cm, fold in thirds (letter fold) — this is 1 single fold. Chill 30–45 min. Perform tours 2 and 3, always rolling in the same orientation; mark the dough with finger indentations to track fold count. Chill. Repeat for tours 4, 5, 6. After tour 6, rest at least 4 hours (or overnight) before shaping. Bake at 200–220°C from cold.
Tips
- Temperature control is the entire job: if butter goes above 20°C it smears into the dough; if below 10°C it shatters and pierces layers. Work in a cool kitchen (18°C or colder) and chill between every two folds without exception.
- Always roll in the same direction (parallel to the open seam end) to maintain layer alignment. Rolling across the seam displaces layers and creates uneven lift.
- Rest the finished dough at least 2–4 hours (overnight is better) after the final fold before cutting and baking — rested gluten holds its shape under heat rather than contracting and deforming.
- Cut puff pastry with a very sharp, clean knife or cutter — dragging or tearing the edge compresses layers and prevents even lift. Egg wash must not run down cut edges for the same reason.
- Bake from cold: place cut, shaped pastry in the refrigerator for 20–30 minutes before putting it in the oven. Cold pastry produces more dramatic lift because the butter stays solid until the outer crust begins to set.
- Poke large pieces (vol-au-vents, pie lids) with a knife point or thin skewer in several places to allow steam to vent evenly and prevent ballooning.
Variations
- Rough puff (demi-feuilletée)
Butter is cut into rough chunks and blended incompletely into the flour before water is added; only 4 single folds are performed; layers are fewer and less uniform but the method takes a fraction of the time; suitable for turnovers, sausage rolls, and rustic tarts
- Inverted puff (feuilletage inversée)
The beurrage is on the outside and the détrempe is encased within; developed by Gaston Lenôtre; the result is exceptionally crisp and evenly laminated — considered superior for mille-feuille and pithiviers but requires great technical skill
- Half-butter puff
Beurrage at 50% of détrempe weight (2:1 ratio) — a leaner dough that produces less lift and fewer layers; used in commercial production where full puff is cost-prohibitive
- Gluten-free rough puff
Uses a GF flour blend with added xanthan gum; butter is incorporated in chunks; only 3–4 folds work before the dough tears; layers are approximate but useful for allergen-free applications
- Lard or shortening puff (kourou)
Some Eastern European and Middle Eastern traditions substitute lard for butter in a similar laminated dough; the result is flakier with a neutral flavor, common in börek-adjacent pastries

The mathematics of 729 layers
Each single fold (tour simple) triplicates the existing layer count. Starting with 2 layers (1 détrempe sheet + 1 beurrage sheet) after the initial encasement: after fold 1 = 6 layers, fold 2 = 18, fold 3 = 54, fold 4 = 162, fold 5 = 486, fold 6 = 729. In the oven, the water content of the butter (even dry butter carries ~2–4%) turns to steam at 100°C. Because each butter layer is sealed between two wafer-thin dough layers, the steam is trapped and pushes the dough upward before the starch gelatinizes and sets the structure. The result is a pastry that expands 6–8× its pre-bake height with no leavening agent whatsoever.
Why 1:1 is the professional standard
The equal-weight formula is a deliberate engineering choice. Less butter (e.g., 30–40% of total weight) does not provide enough steam pressure or sufficient fat lubrication between layers — the dough layers bond during baking and produce a dense, bread-like texture rather than a light, shattering one. More butter (e.g., 55–60%) exceeds the dough's structural capacity: the gluten network cannot support the extra fat during the six folds, leading to blow-outs where butter breaks through the surface. At 1:1, the tensile strength of the lean détrempe's gluten network precisely balances the mechanical stress of encasing and rolling an equal mass of butter.
