Rice to Water (White Varieties)

Long-grain white rice absorbs at 1:1.5; Japanese short-grain at 1:1; parboiled and basmati at 1:1.25 — rinsing and soaking shift each number down.

White rice is cooked by absorption: the grain soaks up a precise quantity of water, converting raw starch into soft, cohesive cooked starch. The correct ratio depends on grain variety (length, amylose/amylopectin balance, degree of milling), whether the rice was rinsed, soaked, or parboiled, and the cooking vessel and heat source. Too little water yields hard, chalky centres; too much produces gluey, collapsed grains. These ratios are by volume (cup:cup) for standard stovetop covered absorption cooking, starting with cold water.

Method

Combine rice and cold water in a heavy-bottomed saucepan with a tight-fitting lid. Bring to a full boil over high heat, stir once, reduce heat to the absolute minimum, cover, and cook undisturbed for 15–18 minutes (long-grain) or 12–13 minutes (short-grain). Remove from heat and let steam, covered, for 10 minutes before fluffing. Never lift the lid during cooking — steam is part of the ratio.

Tips

  • Rinsing removes talc coating (on some imported rices) and excess surface starch; always rinse until water runs clear for fluffy separate grains.
  • Soaking short-grain or basmati for 20–30 minutes before cooking gives more even hydration and reduces cooking time, letting you lower the water ratio.
  • Altitude matters: water boils at lower temperatures above 1,500 m, so grains cook more slowly; increase water by 2–3 tbsp per cup and extend cooking time.
  • The 'finger method' (water level sits 1 knuckle above the rice surface regardless of volume) works because the absorption geometry scales with pan diameter, not absolute volume.
  • Old-crop rice (stored over one season) is drier than new-crop; it absorbs more water and benefits from longer soaking.
  • Do not salt the water when cooking rice for sushi — it impedes vinegar seasoning absorption.

  • Japanese short-grain / sushi rice (1:1)

    High amylopectin content; grains cling; less water than long-grain; soak 30 min before cooking for best texture

  • Basmati (1:1.5, soaked)

    Soak 20–30 min, drain, then use 1:1.25–1.5 depending on age of rice; older basmati is drier and needs more water

  • Parboiled / converted rice (1:1.5–1.75)

    Parboiling gelatinises the starch before milling; grains cook firm and separate; needs slightly more water and longer cooking

  • Rinsed long-grain (1:1.4)

    Rinsing removes surface starch; reduces stickiness; shave ~10% off water to avoid mushiness

  • Rice cooker short-grain (1:1 or fill line)

    Rice cookers are calibrated for specific cups (often 180 ml, not 240 ml); use the cooker's own cup and fill line for most reliable result

  • Pilaf method (1:1.75, with fat)

    Toast rice in butter or oil before adding hot liquid; fat coating slows initial absorption; ratio increases slightly

Why Short-Grain Needs Less Water

Short-grain rice (japonica varieties) has a higher amylopectin-to-amylose ratio than long-grain (indica). Amylopectin swells rapidly and binds water efficiently, so grains reach the correct texture with less liquid. Using long-grain ratios for short-grain produces starchy, wet, collapsed rice.

Volume vs. Weight

Volume ratios (cup:cup) are traditional and convenient, but weight ratios give more consistent results across brands and ages of rice. A standard weight ratio for long-grain white is 1 g dry rice : 1.5–1.6 g water. Professional kitchens often switch to weight for batch cooking.
