Rice Noodle / Idiyappam Dough (Rice Flour to Hot Water)

Boiling water at a 1 : 1.5 ratio to fine rice flour partially gelatinizes the starch, producing a smooth, pliable dough that presses through a mould without crumbling or sticking.

Idiyappam (also called string hoppers or nool puttu) is a South Indian and Sri Lankan preparation in which fine rice flour is mixed with boiling water to create a soft, cohesive dough. The hot water partially cooks (gelatinizes) the starch granules, converting the otherwise crumbly dry flour into a plastic, extrudable mass. The dough is then pressed through a disc-style mould (idiyappam press or chakli press) into thin strands coiled on perforated steaming trays. No gluten is present, so structure comes entirely from gelatinized starch; the ratio and water temperature are therefore critical — too cool, and the dough crumbles; too much water, and the strands are too wet to hold their shape.

Method

Bring water to a rolling boil with salt dissolved. Sift the fine rice flour into a wide bowl. Pour boiling water over the flour all at once and stir vigorously with a wooden spoon until a rough dough forms. Allow to cool just enough to handle (2–3 minutes). Knead with oiled hands for 3–4 minutes until smooth and slightly tacky but non-sticky. Load immediately into the idiyappam press and press in circular motions over lightly oiled steaming trays. Steam over high heat for 8–10 minutes until strands are set and no longer translucent. Serve immediately — the dough dries out quickly.

Tips

  • Temperature is everything: the water must be boiling, not just hot. A thermometer reading above 95 °C (203 °F) at the moment of mixing is the practical floor.
  • Roasted rice flour absorbs water slightly faster and yields a more stable dough; raw flour can make the dough feel greasy or too soft — reduce water by 10 ml if the dough slumps.
  • Press and steam immediately. Idiyappam dough stiffens as it cools and becomes impossible to extrude without cracking. If it firms up mid-batch, cover with a damp cloth and gently re-warm by placing the bowl over the steaming pot.
  • The mould disc diameter controls texture: a fine disc (1 mm holes) yields delicate nests that absorb coconut milk quickly; a coarser disc makes sturdier strands that hold up in stir-fries.
  • Leftover idiyappam (fully steamed and cooled) can be stir-fried with mustard seeds, curry leaves, and vegetables — a common Tamil Nadu breakfast dish called idiyappam upma.
  • If the dough cracks while kneading, wet your hands slightly and keep kneading rather than adding water directly to the dough — over-wetting makes the pressed strings stick and clump.
  • Mould disc size is also a naming convention: flat-hole discs (~3 mm) are used for sevai, fine-hole discs (1–1.5 mm) for idiyappam proper.

Variations

  • Ragi (finger millet) idiyappam

    Replace up to 50% rice flour with roasted ragi flour; increases water slightly (to ~1.6 parts) to compensate for higher bran absorption; earthy, deep brown strands.

  • Wheat sevai (sevai from semolina)

    Fine semolina (rava) replaces rice flour; ratio shifts to 1:1.2 water because semolina absorbs more slowly and the dough is kneaded rather than poured hot.

  • Instant rice noodle dough (Vietnamese bánh hỏi)

    Similar gelatinization principle using fine rice flour at roughly 1:1.4; dough is poured thin and steamed in sheets, then cut into ribbons rather than pressed.

  • Sri Lankan string hoppers (indiappa)

    Pressed onto round woven mats (string hopper mats) and stacked; slightly higher salt; typically served with coconut milk gravy (sothi) or pol sambol.

  • Wheat idiyappam (gotthambu idiyappam)

    Roasted wheat flour replaces rice flour at the same 1:1.5 ratio; slightly chewier, earthier flavor.

  • Nool puttu (Kerala)

    Same dough, pressed into a cylindrical steamer insert instead of a flat mould; produces a block of layered strings rather than individual nests.

Gelatinization as structure

Rice flour contains no gluten proteins, so the network that holds wheat pasta together simply does not exist. Instead, boiling water causes starch granules to swell, absorb water, and rupture — a process called gelatinization — converting the flour into a viscous, cohesive paste. This paste cools into a plastic solid that can be extruded. The minimum temperature for rice starch gelatinization is approximately 58–79 °C, but full plasticity requires near-boiling water. Using water below about 90 °C produces a crumbly dough because insufficient starch is gelatinized to bind the mass.

Why the ratio is sensitive

At 1:1.5, the dough is just cohesive enough to press cleanly and hold the delicate strand shape through steaming. Drop to 1:1.2 and the dough crumbles in the press; push to 1:1.8 and the strands flow together into a sticky mass before steaming can set them. Humidity, flour brand, and how finely the rice was milled all affect the exact sweet spot within a narrow ±15 ml range.
