The 1.8–2.2% salt-to-flour band that flavors bread, tightens gluten, and keeps fermentation on schedule — deviating in either direction degrades the loaf.

Salt percentage in bread is expressed as a baker's percentage: grams of salt divided by grams of flour, multiplied by 100. Within the 1.8–2.2% range, salt performs three distinct functions simultaneously: it seasons the crumb and crust; it strengthens gluten by promoting tighter crosslinking between protein chains, producing a more elastic, tear-resistant dough; and it retards fermentation by drawing water away from yeast cells (osmotic stress), slowing activity enough to allow complex flavor development during a controlled bulk ferment.

Method

1. Weigh flour. Multiply by 0.018–0.022 to determine salt weight. 2. If using an autolyse, hold salt (and yeast) until after the rest. 3. Dissolve salt in a small amount of the recipe's reserved water before incorporating — this prevents pockets of un-dissolved salt from locally degrading gluten. 4. Add salt after initial dough formation; mix until fully incorporated before assessing texture.

Tips

  • Never add salt directly on top of dry yeast — even brief direct contact begins to osmotically stress and kill yeast cells. Add them separately or dissolve salt in water first.
  • Weight over volume is non-negotiable: one teaspoon of fine sea salt weighs about 6 g; one teaspoon of Diamond Crystal kosher salt weighs about 3 g — the same 'teaspoon' instruction can halve or double your salt percentage.
  • In warm weather (kitchen above 25 °C / 77 °F), shade your salt percentage toward 2.2% to slow fermentation and prevent overproofing.
  • Salt strengthens gluten: a dough made with 2% salt will feel noticeably firmer and be less extensible than the same dough made with 1.5% — factor this into shaping plans.
  • Sourdough bakers can lean toward 2.0–2.2% because the extended fermentation timeline means fermentation-retarding effects are desirable for flavor development.
  • If your bread tastes bland despite a good crust, the most common culprit is salt below 1.8% or flour that has absorbed more water than expected, diluting effective salt concentration.

Variations

  • 1.5% (low salt)

    Dough ferments faster and less predictably; crumb is slightly more open due to weaker gluten; flavor is noticeably flat — used in certain Tuscan pane sciocco bread traditions

  • 1.8% (lower bound, standard)

    Minimum for reliable flavor; common in lean baguette formulas where fermentation must proceed briskly to develop crust flavor

  • 2.0% (sweet spot)

    The most widely specified percentage across professional bread formulas; balances all three functions optimally

  • 2.2% (upper bound)

    Marginally stronger gluten; fermentation noticeably slowed; useful in warm kitchens where overproofing is a risk

  • 2.5%+

    Detectably salty; yeast inhibited significantly; avoided in standard breads unless intentional (some pretzel doughs, certain flatbreads)

  • Pane sciocco (Tuscan salt-free bread)

    Uses 0% salt — an ancient tradition designed to partner with intensely salty cured meats and aged cheeses; gluten is extensible and fermentation is rapid

Gluten tightening mechanism

Salt ions (Na⁺ and Cl⁻) interact with gluten proteins by reducing the repulsion between negatively charged protein groups, allowing the proteins to pack more tightly and form stronger crosslinks. This produces a smoother, more cohesive dough that holds gas more effectively during fermentation. Salt-free doughs are noticeably stickier and more extensible — a useful demonstration of the mechanism that can be run side-by-side in any teaching kitchen.

Fermentation control function

At 2%, salt reduces the water activity around yeast cells through osmosis, slowing CO₂ production by roughly 10–15% versus a salt-free dough under otherwise identical conditions. This retardation is not linear — the effect is proportionally greater above 2.5%. In a sourdough context, salt also moderates lactic acid bacteria activity, helping regulate the balance between acetic and lactic acid production and, therefore, the sourness of the finished bread.
