Simple Syrup (1:1 and 2:1 Sugar to Water)

Two concentrations, two jobs: 1:1 for drinks and soaking syrups, 2:1 (rich) for cocktails and shelf-stable sweetening.

Simple syrup is an aqueous solution of sucrose used as a liquid sweetener in cocktails, pastry soaking liquids, sorbets, and glazes. The two standard concentrations are thin (1:1 — equal parts sugar and water by weight, roughly 50° Brix) and rich (2:1 — two parts sugar to one part water by weight, roughly 66° Brix). Thin syrup integrates easily into cold liquids; rich syrup requires less volume to achieve the same sweetness, resists crystallization, and has a longer shelf life due to its higher sugar concentration depressing water activity.

Method

Thin (1:1): Combine equal weights sugar and water in a saucepan. Bring to a gentle simmer, stirring until sugar fully dissolves — about 2 minutes. Remove from heat; do not boil. Cool and bottle. Alternatively, shake cold for 1–2 minutes in a sealed jar until dissolved (cold method — preferred when keeping the syrup clear and aromatic). Rich (2:1): Combine two parts sugar with one part water. Heat is required — bring to a simmer over medium heat, stirring frequently, until fully dissolved. Cool completely. The syrup will be noticeably more viscous.

Tips

  • Use weight ratios, not volume — sucrose is denser than water and a cup of each is not a 1:1 ratio by weight
  • Rich 2:1 syrup lasts 2–4 weeks refrigerated; thin 1:1 lasts 1–2 weeks; add 1 tsp vodka per 250 ml to extend shelf life
  • Never let simple syrup boil hard — evaporation shifts the concentration unpredictably; a gentle simmer for 2 minutes is sufficient
  • Cool completely before bottling — pouring hot syrup into a sealed bottle can cause crystallization on the lid
  • For sorbet, use 1:1 as the base and calibrate with a Brix refractometer; sorbet typically targets 28–32° Brix in the final mix
  • A 66° Brix rich syrup sits just below the crystallization threshold at room temperature — store warm; chill only when needed

Variations

  • Demerara syrup (2:1)

    Rich syrup made with raw demerara sugar; caramel and molasses notes; standard in tiki cocktails

  • Gomme syrup

    1:1 simple syrup with gum arabic dissolved in (1 tsp per 250 ml); adds texture and mouthfeel in classic cocktails

  • Lavender or herb-infused simple syrup

    Add dried botanicals at the hot stage, steep 15 minutes, strain; keeps the 1:1 concentration

  • Vanilla simple syrup

    Split vanilla bean simmered in 1:1 syrup; essential for café drinks and panna cotta soaking

  • Fruit-infused shrub base

    1:1 syrup plus equal weight of fruit, macerated cold 24 hours, then strained; finished with acid

Notes

Brix as a practical measure

Degrees Brix (°Bx) measures grams of sucrose per 100 g of solution. A 1:1 syrup (500 g sugar in 500 g water = 1 kg solution) is 50° Brix. A 2:1 syrup (400 g sugar in 200 g water = 600 g solution) is approximately 66.7° Brix. A Brix refractometer costs under $30 and removes all guesswork — invaluable when scaling sorbets, glazes, and preservation-critical preserves.

Why rich syrup in cocktails

Craft bartenders favor 2:1 (rich) syrup because it adds sweetness without adding as much water, preserving dilution control in shaken or stirred drinks. Using thin syrup where a recipe specifies rich effectively under-sweetens and over-dilutes the cocktail. When converting recipes, use half the volume of rich syrup to substitute for thin syrup.
