Simple Syrup for Cocktails (1:1 vs. 2:1)

The foundational sweetener in cocktails — 1:1 (sugar:water) for everyday use and 2:1 for rich syrup — with the ratio governing both sweetness per pour and how long the bottle stays safe on the bar.
Simple syrup is sugar dissolved in water and used in cocktails to provide sweetness without the granular texture of undissolved sugar. The two standard concentrations — 1:1 (equal parts sugar and water by weight or volume) and 2:1 (two parts sugar to one part water, the 'rich' or 'thick' syrup) — are not interchangeable. They differ in sweetness density, viscosity, pour volume, and shelf life. A bartender who builds a Daiquiri with rich syrup where the recipe calls for simple will produce a noticeably sweeter drink unless the pour is halved. Knowing which concentration a recipe assumes is as important as knowing the ratio itself.
The proportions
- 200 g (1 part by weight)
- Standard syrup — white granulated sugar — Caster sugar dissolves faster but any fine white sugar works
- 200 ml (1 part by volume)
- Standard syrup — water — Filtered water; mineral water can add a faint flavor
- 400 g (2 parts by weight)
- Rich syrup — white granulated sugar — Requires brief heat to fully dissolve at this concentration
- 200 ml (1 part by volume)
- Rich syrup — water — Hot water (not boiling) used to achieve complete dissolution
- 1 tsp per 250 ml
- Optional: gum arabic — Converts standard syrup into gomme syrup; adds silky body without additional sweetness
Method
Standard 1:1: Combine equal weights of sugar and water in a clean bottle, seal, and shake until all sugar dissolves (at room temperature, fine sugar dissolves in about 2 minutes). No heat required. Rich 2:1: Dissolve sugar in hot (not boiling, ~70°C) water on the stove, stirring constantly, then cool before bottling. Avoid boiling as it can caramelize the sugars and introduce an amber tint. Both can be made cold if you allow 10–15 minutes of shaking; cold-process 2:1 is slower but avoids any thermal flavor change. Store refrigerated in a sealed bottle.
Tips
- Rich 2:1 syrup requires half the volume of standard syrup to achieve the same sweetness — always adjust pour volume when switching between concentrations
- Standard 1:1 refrigerated shelf life is 2–3 weeks; rich 2:1 lasts 4–6 weeks because the higher sugar concentration inhibits microbial growth
- Adding a few drops of vodka (2–3% of total volume) extends shelf life of either concentration by another week without affecting flavor
- Never boil the syrup — sucrose can partially invert (splitting into fructose and glucose), which creates off-flavors and changes sweetness character
- For high-volume bar use, 2:1 is preferred because the smaller pour volume means one bottle goes further and the pumps are calibrated in smaller increments
- Color is an indicator of concentration: 1:1 is water-clear; 2:1 has a very faint viscous gleam when you tilt the bottle
- Cold-process (no heat) 1:1 is indistinguishable in flavor from cooked; cold-process 2:1 takes longer and may leave trace undissolved crystals — shake vigorously
Variations
- Demerara syrup (2:1)
Demerara sugar instead of white; adds molasses notes and amber color; used in Ti' Punch, Old Fashioned riffs, rum cocktails
- Turbinado syrup (1:1)
Coarser raw sugar at standard ratio; slightly more mineral and caramel flavor than white
- Honey syrup (3:1)
Three parts honey dissolved in one part warm water to lower viscosity; used in Bee's Knees, Gold Rush
- Agave syrup (2:1 or 3:1)
Agave nectar thinned with water; lower glycemic index; used in Margarita and Paloma riffs
- Gomme syrup
1:1 simple syrup with 1% gum arabic added; creates extraordinary silky mouthfeel; traditional in 19th-century cocktails
- Flavored simple syrups
Fresh herbs, spices, or zest steeped in finished 1:1 syrup off heat; lavender, rosemary, jalapeño, cinnamon, cardamom are common

Why the ratio matters more than the name
Many classic cocktail recipes simply call for 'simple syrup' without specifying concentration, which creates inconsistency when a 1960s recipe assumes the bartender is using rich 2:1 (common in pre-Prohibition and mid-century bars) but a modern home bartender uses 1:1. The result is a drink that is noticeably under-sweet. David Wondrich's historical research confirms that pre-Prohibition 'simple syrup' was typically a 2:1 concentration — meaning many classic recipes need their syrup volume reduced by roughly half when using today's standard 1:1 product.
Sucrose inversion and cold-process purity
Boiling a sucrose-water syrup causes partial hydrolysis (inversion) into its component monosaccharides fructose and glucose. Fructose is sweeter than sucrose, so an over-cooked syrup can taste sweeter than expected and will also caramelize at a lower temperature in cooking applications. For cocktail use where the syrup's only role is neutral sweetness and texture, cold-process or low-heat (under 70°C) preparation is preferred to preserve the clean flavor and predictable sweetness of intact sucrose.
