Soufflé Base (Béchamel to Egg)

Build a soufflé from a stiff béchamel base at roughly 3 : 2 : 3 — base to yolks to whites — for a reliable rise with structural lift.

A soufflé is a baked egg preparation built on a flavoured base — classically a thick béchamel — that is enriched with egg yolks and then lightened by folded-in whipped egg whites. The ratio of base to total eggs, and the proportion of yolks to whites within that egg component, governs both the flavour density and the height of the rise. The béchamel base must be significantly stiffer than a pouring sauce because it must carry flavourings (cheese, chocolate, purée) and still suspend the whipped whites without collapsing before the oven heat sets the protein structure.

Method

Make a thick béchamel: melt 30 g butter, stir in 30 g flour, cook 1–2 minutes, then add 200 ml hot milk gradually, stirring until very thick and smooth. Remove from heat. Beat in egg yolks one at a time, stirring vigorously after each so the heat does not scramble them. Fold in the main flavouring (grated cheese, chocolate, vegetable purée). Whip whites with a pinch of cream of tartar or salt until they hold firm, glossy peaks but are not dry. Lighten the yolk base with one-quarter of the whites (stir vigorously to loosen), then fold in the remaining whites in two or three additions using a wide spatula — cut and fold, rotating the bowl, until just combined with a few white streaks remaining. Pour into a buttered, crumbed ramekin filled to three-quarters. Bake at 190–200 °C for 12–16 minutes (individual) or 25–35 minutes (large soufflé dish) without opening the oven door.

Tips

  • The béchamel base must be warm (not piping hot, not cold) when yolks go in — ideally 50–60 °C — to avoid scrambling while still dissolving the yolk proteins.
  • Egg whites must be free of any yolk or fat; even a trace prevents the proteins from forming a stable foam.
  • Fold with the minimum number of strokes needed to lose visible white streaks; over-folding deflates the foam and the soufflé will be flat.
  • A collar of buttered parchment tied around the ramekin lets the mixture rise above the rim without falling over the edge.
  • The ratio of whites-to-base can be nudged toward more whites for a taller, drier soufflé or fewer whites for a denser, creamier one.

  • Cheese soufflé (Soufflé au fromage)

    Add 80 g Gruyère + 20 g Parmesan per 250 g base; a pinch of cayenne is traditional

  • Chocolate soufflé (dessert)

    Replace béchamel with a crème pâtissière base; melt 70% dark chocolate into the base at 20% weight; slightly fewer whites (ratio tips toward 2:3 whites to base) for a fudgier interior

  • Spinach or vegetable soufflé

    Drain purée extremely well before folding in — excess moisture wets the whites and prevents rise; increase roux by 20% to compensate

  • Two-stage soufflé (restaurant method)

    Base + yolks prepared hours ahead, whites folded and baked to order; base must be brought to room temperature before folding

  • Soufflé glacé (frozen)

    No egg whites baked — instead Italian meringue is folded into whipped cream + flavoured base and frozen; served in the same ramekin but not cooked

Why the base must be stiff

A thin béchamel base will not support the weight of the whipped whites or the cheese — the gas bubbles will rise and burst before the protein matrix sets, producing a flat, wet result. The thicker base (higher flour-to-milk ratio) provides viscosity that slows bubble escape until the oven heat coagulates the egg proteins and locks the risen structure in place. Aim for a base that holds a heavy ribbon when dropped from a spoon.

Whites: firm peaks vs. stiff peaks

Firm (not stiff-dry) peaks fold more easily and trap a more uniform bubble size. Stiff peaks produce larger, irregular bubbles that are more fragile during folding. A small pinch of cream of tartar (1/8 tsp per 4 whites) stabilises the foam by lowering pH, allowing whites to be beaten to a more stable firm peak without over-beating.
