Adhesive labels, casein tags, or food-safe markers used to identify cheeses during aging and storage. They record the make-date, milk type, batch, and affinage stage so wheels can be rotated and traced through months of ripening. In affinage caves, casein labels are pressed into the rind before brining so the identity stays with the cheese for its entire life.

Cheese labels and markers are the tools a cheesemaker uses to identify a wheel from the moment it leaves the press until the day it is cut: the parchment disc pinned to a Parmigiano-Reggiano, the green casein plate embedded in a Comté rind, the wax pencil scribbled across a bloomy-rind wheel in an affinage cooler, the date stamp on a Gouda's paraffin coat. They are among the oldest continuous forms of food labeling in the Western world — long before nutrition facts or barcodes, wheels carried the dairy's mark, the make date, and the batch as a guarantee of origin.

What separates a cheese label from a kitchen sticky note is its obligation to survive. A wheel of aged Comté or clothbound Cheddar may sit in a cave for 18 to 36 months, exposed to brine, humidity, mold growth, washing, brushing, and rind friction. The label must remain legible, attached, and inert. That is why the materials are so specific: food-grade parchment and Tyvek that breathe with the rind, casein discs that bond to the surface as it cures, wax pencils whose paraffin binder is the same material already on many rinds, and pigmented inks certified for direct food contact.

For the home or small-scale cheesemaker, a labeling kit is not a nice-to-have but a working requirement. A wheel without a date is a wheel you cannot age, taste, or sell with confidence; a wheel with the wrong ink on it is a wheel you should not eat. Understanding the categories below — and the rules that govern what may legally and safely touch a rind — is the difference between an aging cave you can manage and one that has become a mystery of unmarked forms.

Traditional European marking systems as cultural heritage

Three systems are worth knowing because they shaped how every cheesemaker thinks about identification. The Italian ovolo is a pin-prick pattern pressed into the wet rind of a fresh wheel: a dotted pattern that, read by a trained eye, encodes the month, year, and dairy of origin — the same way a farmer's ear-notching system records livestock identity. The French casein plate is a small printed disc of milk protein that is laid onto the still-tacky rind or bandaged into the cloth wrap; the disc and the rind effectively fuse during the first weeks of affinage, so the label becomes part of the cheese. The Dutch wax date wheel is a printed paper disc embedded in the colored paraffin coat of a Gouda or Edam, so that peeling back the wax is the only way to remove the date. Each system solves the same problem — make the label inseparable from the wheel without contaminating it — and each is now written into the protected designation rules of its respective cheese.

Food-safety rules for inks and label materials

The single most important rule of cheese labeling is also the easiest to break: only food-contact-certified ink and substrate may touch the rind. A standard Sharpie or ballpoint pen contains solvents such as xylene, toluene, or alcohols that are not approved for direct food contact, and over months of affinage those compounds can migrate from the surface into the underlying paste, particularly on bloomy- and washed-rind cheeses whose rinds remain moist and permeable. Food-safe pens use pigmented, low-migration ink certified under EU Regulation 1935/2004 or US FDA 21 CFR; the more robust industrial versions are also X-ray-detectable so that a lost pen cap or stray label fragment can be found in finished product. The substrate matters as much as the ink: a plastic sticker with acrylic adhesive may be food-safe in itself, but sealing a large area of the rind with an impermeable film disrupts moisture and gas exchange and prevents normal rind development, so even legal labels must be sized and placed with the cheese's biology in mind.

Building a labeling kit for the home or small-production cave

A serious home or farmstead cheesemaker does not need a roomful of marking tools — they need a small, complete kit that covers every wheel they will ever make. The four essential components are a stack of food-grade parchment circles with stainless tacks for pressed and hard cheeses; a small stock of casein plates with the dairy name and a sequential batch number pre-printed; one or two food-safe permanent pens for direct rind marking and for affinage cards; and a wax pencil for quick notes, batch IDs, and writing on wax-coated wheels. To that core, add a custom rubber date stamp inked with food-grade ink, a roll of Tyvek loop tags for soft and washed-rind cheeses that cannot accept a pin, and a small notebook or card file for affinage records. The kit pays for itself the first time a wheel is misidentified in the cave and aged two months past its intended date — or worse, discarded because no one could remember what it was.

Tips & pitfalls

  • Use only food-contact-certified ink — ordinary ballpoint or solvent markers can leach chemicals into the rind and underlying paste
  • Pin parchment circles into the flat face, not the curved side, so they remain attached as the wheel shrinks during drying
  • Press casein plates into the rind within hours of make while the surface is still soft enough to grip them
  • Choose X-ray-detectable food pens as a safeguard against fragment contamination in finished product
  • Avoid covering large areas of the rind with impermeable adhesive labels — they block moisture and gas exchange needed for proper rind development
  • Write dates in an unambiguous format (ISO YYYY-MM-DD) to avoid confusion in shared or multi-language caves
  • Warm a wax pencil tip briefly between your fingers before writing on cool or oily rinds for cleaner marks
  • Replace any lost or illegible label immediately — an unidentified wheel in an aging cave is effectively lost
  • Stamp bandage cloth before wrapping, not after, for the cleanest impression and best ink adhesion
  • Photograph each wheel at make time as a backup identification record
  • Keep spare pins, plates, and tags in the make room so labels can be applied the same day a wheel is formed
