Two-Ply Cheese Paper

Breathable two-layer paper that wraps cheese to let it breathe while retaining moisture.

Two-ply cheese paper is a wrapping with a porous outer paper laminated to a thin plastic inner layer. It lets cheese breathe and release ammonia and gases while the inner film holds just enough moisture so the cheese neither dries out nor suffocates the way it does in cling film. Cheesemongers and home cooks use it to store cut wedges of soft and aged cheeses for far longer than plastic wrap.

Two-ply cheese paper is a bonded laminate built for one job: keeping cut cheese alive in the refrigerator without drying it out. The outer face is a porous kraft-style cellulose sheet that lets carbon dioxide and water vapor escape fast enough to keep the surface from going anaerobic, while the inner face is a thin, gas-permeable film — usually regenerated cellulose (cellophane) or low-density polyethylene — that holds back the worst of the moisture loss and keeps the cheese from developing a hard, leathery rind. It sits deliberately between plastic wrap, which seals the cheese in its own CO₂ and encourages slime and pathogen growth, and bare parchment or cheesecloth, which vents moisture so efficiently that a cut wedge turns chalky within days.

The reason the dual-layer design matters is that cheese keeps metabolizing after it is cut. Lactic bacteria continue to produce CO₂, surface yeasts and molds keep respiring, and moisture keeps migrating from the paste to the surface where it evaporates. A wrapper that is fully impermeable traps that CO₂ and the surface goes slick and ammoniated; a wrapper that is fully breathable lets the paste desiccate. Two-ply cheese paper balances both: the porous outer layer vents fast enough to mimic a cave wall, while the semi-permeable inner film slows moisture loss to a rate the paste can replace by diffusion from its interior. In practice, a properly wrapped wedge of semi-hard cheese stays in good condition for two to four weeks, compared with a day or two under parchment and a few days under plastic.

Used correctly, it is one of the few storage methods that genuinely serves every cheese family — fresh, bloomy, washed-rind, blue, semi-hard, and aged hard — with the only variable being which side touches the cheese. The paper itself is single-use and food-contact grade, with no optical brighteners or plasticizers, and it works best in a humid, refrigerated environment (about 80–90% relative humidity, 1–4°C), where it becomes part of a system that includes the right temperature, the right humidity, and the right wrapping orientation.

Types & varieties

Standard two-ply (paper-out / film-in)

The default construction; paper faces out, permeable film faces the cheese. Used for most semi-hard and hard cheeses where the surface is relatively dry.

Reversed wrap (film-out / paper-in)

Used for very moist or bloomy-rind cheeses where the paper side is placed against the cheese to wick surface whey and discourage slime buildup.

Pre-cut sheets

Sold folded or flat in roughly 10.5 in squares — convenient for wedges and small pieces at home or behind a counter.

Rolls / large-format

Wider rolls (10–14 in) for wrapping whole wheels, large format wedges, and affinage cellars.

Which side touches the cheese

The single most important decision when wrapping is which layer faces the paste, and it is governed by how much moisture the surface is shedding. For most semi-hard and hard cheeses — cheddar, Gouda, Gruyère, Manchego, Parmigiano, aged Comté — the surface is comparatively dry, so the semi-permeable film side goes against the cheese to hold back moisture loss and keep the cut face from drying into a hard rind, while the porous paper faces out to vent CO₂ and water vapor fast enough to keep the surface from going anaerobic. For very moist, bloomy-rind, or blue cheeses — Brie, Camembert, Époisses, Roquefort, fresh chèvre — the orientation is reversed. Here the absorbent paper side is placed against the cheese to wick surface whey and discourage slime, while the film side faces out to provide a slightly more humid microclimate and slow overall moisture loss. Getting this wrong will not ruin the cheese, but it can mean a bloomy rind that collapses into slime, or a hard cheese that dries at the cut face within a week.

  • Hard, low-moisture cheeses (Parmigiano, aged Gouda, pecorino): film-in, paper-out.
  • Semi-hard cheeses (cheddar, Gruyère, Manchego): film-in, paper-out is the safe default.
  • Bloomy and washed-rind cheeses (Brie, Camembert, Époisses, Taleggio): paper-in, film-out, with extra care to keep the rind intact.
  • Blue cheeses (Roquefort, Stilton, Gorgonzola): paper-in, film-out, and ideally double-wrapped to keep spores off neighboring foods.
  • Fresh cheeses (mozzarella in brine, fresh chèvre, ricotta): these do better in their original liquid or in a lidded container; cheese paper is useful only for very short storage of drained fresh cheese.

Building a proper cheese drawer

Two-ply paper does most of the work, but it is only one leg of a three-legged stool: temperature, humidity, and wrapping. The cheese drawer or the warmest part of the refrigerator (often the door or a dedicated cheese compartment) is the right thermal zone — roughly 1–4°C. The back wall of the fridge, where temperatures hover near 0°C, is the wrong place; it freezes the surface moisture and ruins texture. For humidity, aim for 80–90% relative humidity. A vegetable crisper is usually the easiest way to get there. In a drier fridge, a lidded container with a damp (never wet) paper towel or a small open dish of water will recreate the microclimate a cheese cave provides. Finally, wrap loosely enough that the cheese is not compressed — a billowy wrap allows gas to circulate across the entire surface — and fold seams underneath so any condensation runs off rather than pooling against the rind.

Tips & pitfalls

  • Wrap loosely — cheese should not be compressed; a billowy wrap allows gas exchange at the entire surface rather than only at the seams.
  • Match the orientation to the cheese: film-to-cheese (paper outside) for hard, low-moisture styles to hold in moisture; paper-to-cheese (film outside) for bloomy, washed-rind, or blue cheeses where surface whey needs to be wicked away.
  • Double-wrap wheels or very large wedges with a second sheet for long storage to slow moisture migration through seam edges.
  • Fold seams underneath so condensation runs off rather than pooling against the cheese surface.
  • Label every package with the cheese name, milk type, and wrap date; rotate stock using first-in, first-out so nothing hides in the back of the drawer.
  • Replace the paper promptly if it becomes translucent with absorbed whey, develops off-odors, or sticks to the rind — the paper is doing its job by absorbing, and a saturated sheet no longer regulates moisture.
  • Store wrapped cheese in the warmest part of the fridge (cheese drawer or door), not against the back wall where temperatures approach freezing and damage texture.
  • Do not substitute plastic wrap: it traps CO₂, creates anaerobic conditions that favor Clostridium and Listeria growth, and produces a sweaty surface followed by a hard, dried rind.
  • Avoid aluminum foil for fresh and bloomy cheeses — the lactic acid reacts with the metal and imparts a tinny off-flavor, and foil does not breathe at all.
  • Bring cheese to 15–18°C (60–65°F) for 30–60 minutes before serving; the paper is a storage material, not a display material, and the cheese will taste dramatically better once it has warmed out of the cold.

Construction

Primary function

Single-use
Intended for one-time use; the paper absorbs odors, salts, and surface moisture and should be replaced when visibly damp, every 1–2 weeks for long-aged pieces.
Food safety
Both layers are FDA/EU food-contact compliant; the paper layer is usually unbleached or lightly bleached virgin pulp with no optical brighteners, and the film contains no plasticizers.

Outer paper layer is generally in the 50–80 gsm range — heavy enough to resist tearing when moist, light enough to remain porous.
Compatibility
Suitable for nearly all cheese types: fresh, bloomy, washed-rind, blue, semi-hard, and hard aged; only the wrapping orientation changes by style.
