Fermentation Weight
A glass or ceramic weight that holds vegetables under the brine during fermentation.
A fermentation weight is a heavy glass, ceramic, or stone disc dropped into a fermenting jar or crock. It presses cabbage, cucumbers, or other vegetables below the brine surface, keeping them anaerobic so they ferment safely without surface mold. Sized to fit standard jar mouths, it pairs with an airlock lid for clean lacto-fermentation.
A fermentation weight is a dense disc, half-moon, or rectangular stone whose only job is to keep vegetables pinned beneath their brine during lacto-fermentation. By maintaining continuous contact between the food and the salted liquid, the weight creates the anaerobic environment lactic acid bacteria need to thrive while denying oxygen to the yeasts and molds that would otherwise colonize the surface. Without that constant submersion, even a correctly salted batch can develop kahm yeast, fuzzy surface mold, or soft, discolored patches at the top.
The principle is purely gravity-based — no valves, seals, or moving parts, just dead weight doing its job. Materials matter: soda-lime glass and glazed stoneware are the modern standard because they tolerate acidic brines, can be sanitized in boiling water, and will not react with the lactic acid that builds up over days or weeks. A weight that fits poorly, floats, or is too light defeats the purpose, so sizing to the vessel is the first practical consideration for any fermenter.

A weight that allows vegetables to breach the surface invites the wrong organisms, and the wrong organisms can turn a promising kraut into a pungent, spoiled batch. Sizing and Selection
A fermentation weight is only as useful as its fit. The goal is a weight that covers at least three-quarters of the vessel's interior diameter so no vegetable can slip past the edge and float to the surface. Too small, and a single carrot stick or shred of cabbage will find its way up and begin to spoil; too large, and the weight will wedge in the neck or refuse to sit flat. For mason jars, half-moon ceramic weights and flat glass discs are the two practical shapes — half-moons drop through a regular mouth, while flat discs suit wide-mouth jars most reliably. For 1- to 5-gallon crocks, rectangular or gently curved ceramic stones are the standard; the weight should rest comfortably on top of the packed vegetables without rocking or bridging across the crock walls.

Care Over the Long Term
Glass and glazed ceramic weights are nearly indestructible in normal use, but they are not maintenance-free. A weight that retains biofilm or mineral scale will seed the next batch with whatever it held last. Boiling for five minutes between batches is the simplest reliable routine, and stoneware pieces should always be brought up to temperature in room-temperature water to avoid thermal shock — a hot weight dropped into cool water can craze the glaze or crack the body. After cleaning, dry thoroughly before storage; trapped moisture in a closed cupboard will leave mineral deposits and can encourage surface mold on the weight itself.
- Sanitize glass and ceramic weights in boiling water for 5 minutes before first use and between batches.
- Inspect glazed surfaces under good light for crazing (a web of fine cracks) or chips; damaged glaze can harbor bacteria.
- Never thermally shock stoneware — warm it gradually with the brine or wash water.
- Dry weights completely before putting them away to prevent mineral deposits and surface mold during storage.
- Glass disc weights are dishwasher-safe on the top rack; ceramic pieces are best hand-washed to preserve the glaze.
The Traditional Cabbage Leaf Layer
Before glass and ceramic weights became widely available, fermenters held vegetables under brine with what they had on hand: a folded outer cabbage leaf, a small plate, a clean stone, or a wooden follower. The cabbage leaf method is still worth knowing because it solves a problem weights alone sometimes cannot — it fills the irregular gaps between whole leaves of cabbage, carrot sticks, or beet chunks, creating a continuous surface for the weight to press against. Many experienced fermenters tuck a leaf or two over the vegetables first, then set the weight on top. The leaf becomes part of the ferment and is discarded at packing time.
- Use the outermost, toughest leaves — they hold up best under pressure and over weeks of fermentation.
- Fold the leaf inward to cover the vegetables completely before seating the weight.
- This method is especially useful for whole-leaf ferments like kimchi or fancy sauerkraut where neat packing matters.

- A small zip-top bag filled with 2–3 percent salt water can stand in as an improvised weight in a pinch — it conforms to any shape and the saline keeps it from becoming a contamination vector.
