Filter Pads / Sheets

Dense cellulose pads that polish-filter wine, beer, oil, or stock to remove fine sediment.

Filter pads are thick cellulose sheets graded by micron rating that clarify liquids by trapping fine particles and haze. Winemakers, brewers, and distillers seat them in plate filters to polish a finished drink, and cooks use coarse versions to strain frying oil or clarify stocks. The tighter the rating the finer the clarification, ranging from rough particle removal down to near-sterile pads.

Filter pads are dense, single-use sheets of compressed cellulose — most often bound with diatomaceous earth or perlite — that sit inside a plate filter housing and clarify liquid through depth filtration rather than simple screening. As the liquid is pushed through the pad, particles are trapped throughout the fibrous matrix, not just on the surface, which gives the pad a high dirt-holding capacity and a noticeably brighter, more polished result than cheesecloth, paper towels, or fine mesh. In the kitchen and the small-production cellar they are the workhorse of the final filtration step: the moment you want a young red to drop its haze, a consommé to pass scrutiny under a strong light, or a fresh olive oil to be bottle-stable for months, the pad is what does the work.

The grade of pad you choose is a real decision, not an afterthought. Coarser sheets (roughly 15–25 µm) clarify quickly but still pass some haze; tight sterilizing grades (0.2–0.45 µm) catch yeast and most bacteria and act as a cold sterilization, buying shelf life without heat. Most cooks and small producers work in the middle of the range, stacking a coarse pre-filter upstream of a fine polishing pad so the expensive tight sheet is not choked by the first pass.

Pads are single-use, they do not tolerate high pressure, and they have a specific flow direction. Get any of those wrong and you will blow the sheet, channel liquid past the cake, or shed loose fibers into the product. Treat them gently, pre-wet them, respect the arrow, and they reward you with a clarity and microbial security no other small-batch method can match.

Types & varieties

Seitz K-series (Pall)

The historical reference scale: K0/K1 coarse clarification (~15 µm) through K5/K7 polishing (~0.5–1 µm) up to K14/K15 sterilizing grades (~0.1–0.2 µm). Still the most widely recognized grading in wineries and small breweries.

BECOPAD (Eaton/Begerow)

Pure-cellulose sheets with no DE or perlite, graded by basis weight: 120, 170, 220, 270, 350, 450, 550, 615, 870, 995. Lower dust release, easier disposal, popular in organic and quality-sensitive cellars.

Filtrox

Swiss-made depth filters common in juice, cider, and wine production; numbered grading similar to the Seitz K-series.

Schenk

European cellulose/DE sheets widely used in mid-sized wineries; grading comparable to the Seitz K-series.

Activated-carbon pads

Cellulose sheets loaded with activated carbon for color correction and removal of off-odors — useful for lightening oxidized white wines or polishing aged vinegars.

Pre-filter / trap pads

Coarse, high-capacity sheets placed upstream of finer pads to extend service life on heavily loaded liquids.

Sterilizing pads

Tightest grades (≤0.45 µm, often 0.2 µm) used for cold sterilization of wine, beer, or finished beverages before bottling.

Choosing the right grade

Match the pad to the job, and to what the liquid has already been through. A pad cannot fix a problem upstream; it can only catch what is still suspended at the moment of filtration.

  • Young red wine, post-racking: a coarse sheet (Seitz K0–K2, BECOPAD 170–220) strips bulk sediment quickly.
  • Polished white wine, cider, or vinegar before bottling: a fine sheet (K5–K7, BECOPAD 350–450) gives a bright, marketing-ready clarity.
  • Pre-bottling cold sterilization: a 0.45 µm or 0.2 µm sheet (K14–K15, BECOPAD 870–995) to remove yeast and most spoilage bacteria without heat.
  • Consommé and clear stocks: a coarse-to-medium pad works well; the liquid is already low in solids, so the pad is doing polishing, not bulk work.
  • Olive oil: a standard cellulose pad handles the job, but a pad grade specifically rated for oil runs cleaner and preserves color better than a general-purpose beverage sheet.

How a plate filter is loaded

A plate filter stacks alternating support plates and pads with a center feed channel; the liquid enters the center, is forced outward through every pad, and exits clear. Loading order matters.

  • Place the coarsest pad nearest the inlet so it catches the bulk of the sediment.
  • Stack progressively finer pads moving outward toward the outlet.
  • Always seat pads with the printed flow arrow pointing in the direction of liquid travel; reversed pads lose capacity and can rupture.
  • Wet the stack with clean water or a small volume of product before starting the real run, and send that first flush to waste to purge air and loose fibers.

Tips & pitfalls

  • Always pre-wet the pad with clean water or a small volume of the product being filtered, then run that first volume to waste — this displaces trapped air and rinses loose fibers before they reach the bottle.
  • Respect the printed flow-direction arrow; running a pad backwards drastically reduces capacity and can rupture the sheet.
  • Keep inlet pressure modest (≤1.5 bar / 22 psi). Above roughly 2 bar, depth pads will compact, channel, or blow through, and the filtrate will turn cloudy.
  • Replace the pad when flow drops to a slow trickle — never wash, scrub, or back-flush a depth filter. The trapped cake is doing the work; disturbing it ruins the grade.
  • Stack a coarse pad upstream of a fine pad to extend the life of the expensive tight sheet on loaded liquids.
  • Filter wine cold, ideally straight out of cold stabilization, so tartrate crystals and any residual finings are caught by the pad rather than forming a haze in the bottle.
  • Push beer through with de-aerated water and avoid splashing at the outlet — pad filtration itself adds little oxygen, but a sloppy handoff at the spigot can undo that.
  • Filter olive oil within a few days of pressing: fine sediment quickly generates off-flavors and accelerates oxidation, and a pad cannot rescue oil that has already turned.
  • Store pads flat in their sealed wrapper. A damp pad swells, shifts grade, and sheds fines into the next batch.
