Food-Grade Trash Bag
A liner certified safe for direct food contact, used to bag bulk dough, brines, or food waste.
A food-grade trash bag is a large polyethylene liner manufactured without recycled or chemical-laden plastic so it can safely touch food. Kitchens use them to line bins for food scraps, to bag and chill big batches of dough or brine, or to hold bulk ingredients during prep. The food-grade certification distinguishes them from ordinary trash liners, which may contain additives not meant for food contact.
A food-grade trash bag is not a marketing category — it is a regulatory one. In the United States the defining standard is FDA 21 CFR 177.1520, which approves virgin polyethylene (never recycled) resins for direct food contact once specified extraction limits are met; in Europe the equivalent anchors are Regulation (EC) No 1935/2004 and Commission Regulation (EU) No 10/2011. What that means in practice is simple: the bag may legally touch, hold, or be immersed in food, while an ordinary trash bag — even one that looks identical — may not, because recycled-content and unknown-additive resins can migrate contaminants into whatever is inside.
In a serious kitchen these bags solve problems no other container handles as cleanly. A 2-mil LLDPE liner is the workhorse for cold-fermenting 5-kilogram batches of bread dough in the refrigerator, brining a 14-pound turkey in a five-gallon bucket, lining a fermentation crock in place of a heavy ceramic weight, or reducing a big batch of stock down to a demi-glace. They are inexpensive ($0.20–$0.60 apiece at case pricing), available in sizes from 10 to 55 gallons, and disposable, which removes the cleaning and cross-contamination headaches that come with reusing food buckets and tubs.
The thing to internalize is that "food-grade" describes the resin and its compliance, not the bag's appearance. A clear trash bag from the hardware store is almost certainly not food-grade, even if it looks identical to a NSF-certified liner. Verification comes from explicit FDA, NSF, or EU 10/2011 labeling on the case or spec sheet — never from the color of the film, the smell, or the seller's word.

Why a Regular Trash Bag Won't Do
The difference between a food-grade liner and the bag under your kitchen sink is the resin's history. Recycled-content bags — which is most of the consumer and contractor market — can carry trace contaminants from prior use: industrial chemicals, household cleaners, pesticides, even heavy metals, depending on the stream. Under FDA and EU rules these contaminants can migrate into food, especially into fatty, acidic, or hot preparations, which is exactly the migration testing virgin-resin bags are designed to pass. Visually the two products can be indistinguishable. The only reliable signal is documentation: a spec sheet, NSF listing, or on-case language referencing 21 CFR 177.1520, EU 10/2011, or "FDA food contact." When in doubt, don't.
- Clear plastic is not evidence of food-grade status — most ordinary trash bags are also clear.

Matching the Bag to the Job
Choosing the right liner is a matter of three numbers: thickness, resin, and temperature. Thickness drives leak resistance under load — a 1-mil bag fails fast when you try to lift it filled with brine, while 2-mil LLDPE holds a 14-pound turkey without protest. Resin drives puncture resistance and conformability: HDPE shrugs off bone spurs and shell fragments, LLDPE drapes and seals around dough. Temperature is the most commonly misunderstood variable: standard polyethylene softens well below boiling, so unless the bag is explicitly labeled boilable, it belongs in cold or room-temperature work only. For freezer stocks, freezer-grade film stays pliable at sub-zero temperatures instead of cracking.

Working Safely with the Bag
Even the right bag fails if mishandled. Pinholes from manufacturing or seam flaws at the heat seal are common failure points and almost invisible until the bag is full. A two-second visual inspection before pouring pays for itself many times over. Once loaded, press out excess air and seal with a sanitized tie, zip tie, or bucket lid — trapped air expands and pushes seams during temperature swings. These bags are single-use; washing and reusing them creates micro-punctures and biofilm risk that defeats the food-contact premise entirely.

- Blue is a long-standing commercial-kitchen convention to distinguish food-contact liners from refuse bags — it is not a regulatory requirement, and clear or white bags are equally legitimate if properly labeled.
- Where to buy
- Restaurant supply houses and janitorial catalogs (Heritage, Inteplast, Pitt Plastics, Tough Guy) carry properly certified stock; consumer grocery aisles rarely do.
