Greaseproof Cupcake Liner

Parchment-grade cupcake liner that resists oil soak-through, holding its color and fluted shape against batter so baked muffins and cupcakes release cleanly.

A greaseproof cupcake liner is a fluted paper baking cup engineered to resist oil penetration during baking. Where an ordinary bleached paper cup will absorb fat from the batter and turn translucent on the bottom of a finished muffin, a greaseproof version — built from dense parchment-grade fiber or a silicone-treated stock — keeps its color, its crisp pleats, and a clean outer surface from oven to plate. The effect is part visual (a tidy, photo-ready cupcake) and part functional (no oil bleeding onto the muffin tin, gift box, or wrapper).

Behaviorally, the liner behaves much like baking parchment pressed into a cup shape. It tolerates normal oven temperatures with no flavor transfer, releases a cooled cake cleanly when the seal is broken at the base, and disappears from the eating experience if the baker does not want a paper edge on the bite. It is a single-use item, though a clean liner can usually be hand-washed and reused once or twice before it loses stiffness. Its real limitation is structural: paper has no rigidity of its own, so the cup must be seated in a metal muffin tin (or other rigid mold) for the duration of baking, or it will slump, brown unevenly, and scorch on the oven floor.

In the baker's toolkit, greaseproof liners sit between cheap commodity paper cups and reusable silicone baking cups. They give the fluted presentation that silicone cannot match and the clean release that cheap paper cannot deliver, at the cost of being disposable.

Why greaseproof beats standard paper

A standard bleached paper cup is made from lightweight, porous fiber that wicks oil. During a 20-minute bake, butter or oil from the batter migrates into the paper, and the cup emerges translucent at the base, limp, and prone to sticking. A greaseproof liner solves this in one of two ways. The traditional approach uses a denser, longer-fiber paper — often unbleached kraft — whose tight cellulose structure physically blocks oil migration. The modern approach coats the paper with a thin layer of food-grade silicone, the same chemistry used on baking parchment. Both methods keep the outer wall of the cup looking like it did when it went into the oven, and both release a cooled cake cleanly when the seal at the base is broken with a small knife or by twisting the liner.

Choosing and matching liners

The fluted paper cup is not a mold in its own right; it is a liner for a mold. Choosing the right size and seating it properly in the tin well is what separates a bakery-quality cupcake from a wrinkled, half-released one. Match the cup to the batter's structure: tall tulip cups need a sturdy, high-rising batter to hold their shape, while wettish batters benefit most from a dense kraft or silicone-coated paper that resists soak-through.

  • Standard pleated round is the safe default for most cupcake and muffin recipes
  • Reserve tulip or wrinkle-top liners for sturdy batters such as banana, corn, or ricotta muffins that can support the extra height
  • Reach for unbleached kraft or silicone-coated stock on the wetter, higher-fat batters that challenge ordinary paper

Tips & pitfalls

  • Always seat the liner in a metal muffin tin — unsupported paper slumps and scorches on the oven floor within minutes
  • Even greaseproof liners benefit from a light mist of cooking spray for high-sugar batters (financiers, brown-butter cakes) and for delicate custards that need to glide free of the wall
  • Fill only two-thirds to three-quarters full; overfilling pushes batter up the pleats and over the rim, where it bakes onto the paper
  • Let baked goods cool in the tin for 3–5 minutes before lifting the liner out — pulling at peak oven temperature tears wet crumb from the base
  • If a liner stains brown during baking, that is batter caramelizing on the outside, not grease soaking through; the cup is still doing its job
  • Press each liner firmly into the tin well so the pleats stand vertically; slack sides bake unevenly and leave pale, wrinkled bottoms
  • Cap foil-lined and heavily printed cups at 425 °F / 220 °C; above that, the metallic layer or ink can discolor
  • Store unused liners in a dry, sealed bag — kitchen humidity wrinkles the pleats and reduces the release on delicate batters
