Griddle Cleaning Pad
Abrasive pad or screen used to scour and degrease a hot flat-top griddle.
An abrasive pad, screen, or pumice block held in a handled tool to scour a flat-top griddle while it is still hot. It lifts carbonized grease, residue, and seasoning buildup so the surface cooks evenly and stays sanitary. Used with a griddle stone, water, or cleaner, it is a daily line-cleaning consumable that wears down and is replaced.
A griddle cleaning pad is the abrasive finishing tool that turns a hot, working flat-top back into a clean cooking surface between services. While a long-handled scraper or pumice brick pushes the bulk of carbonized grease into the trough, the pad does the quieter, finer work: it scours the thin film of polymerized oil and burnt-on residue the scraper can't reach, and it degreases without forcing the cook to let the plate cool. In a busy diner or short-order line it is the difference between cooking on glass and cooking on a blackened, sticky mess that ruins the next batch of pancakes.
The pad earns its place because it works hot. Most are designed for use on a griddle sitting somewhere around 275–350°F (135–177°C), where a splash of water hisses into steam and lifts the grease film just long enough for the abrasive to take it off. That heat window is also why the pad is almost always paired with a cast-metal holder: nobody wants a fistful of abrasive mesh two inches from a 300°F steel plate. Depending on the type, the pad may be a disposable aluminum-oxide screen, a long-lived pumice brick, a reusable nylon abrasive, or a soft copper mesh — each suited to a different surface, a different level of grime, and a different stage of the cleaning routine.
It is worth distinguishing the pad from its partners. The scraper is for bulk debris, the pumice brick is for deep carbon and re-seasoning prep, and the pad is for the routine, end-of-shift finish that keeps the seasoning even and the surface food-safe. Used well, with straight strokes, light pressure, and a quick re-oil at the end, a griddle pad extends the life of the seasoning, prevents off-flavors, and keeps the cooking surface as close to its original polish as a working griddle ever gets.

Flat, mesh-like pad of bonded aluminum-oxide fibers; the workhorse of diner and short-order kitchens. Disposable, cuts fast, and rinses grease away easily with water.
Solid block of volcanic pumice. Slower-cutting than screens but very long-lived; good for heavy carbon and for prepping a surface before re-seasoning. Leaves a fine pumice dust that must be wiped clean.
Non-woven nylon (Scotch-Brite-style) loaded with aluminum-oxide or silicon-carbide grit. Reusable, gentler than a screen, and well suited to routine end-of-shift cleaning.
Soft knitted copper coils that scour lightly without scoring. Used where the operator wants to clean a polished or lightly seasoned surface without stripping it.
Cast-aluminum or stamped-steel handle that clamps a flat screen. Turns a flimsy pad into a proper tool and keeps the hand a safe distance from the hot plate.

How it fits into a full cleaning routine
A griddle pad is rarely the first or last tool on the surface. In a properly set-up short-order station you typically see all three working in sequence: a long-handled scraper for bulk debris, a holder-and-screen pad for finishing and degreasing, and a pumice brick for periodic deep cleaning or re-seasoning. The pad's job is the middle step — the one that decides whether the griddle goes into the next shift clean or quietly accumulates a sticky, carbon-heavy film that will eventually have to be stripped.

Choosing the right pad for the surface
The pad you reach for depends on what the griddle is made of and what state it's in. A standard steel flat top can take a stiff aluminum-oxide screen all day; a polished-steel plate needs gentler nylon or a copper mesh to avoid swirl marks; a chrome or hardcoat surface is off-limits to most pads entirely. Reading the griddle manufacturer's spec sheet is worth the five minutes — a wrong pad can ruin a chrome surface in a single pass.

Tips & pitfalls
- Scrape first with a griddle scraper or grill brick to push 90% of the loose debris into the grease trough before reaching for the pad — it saves the screen and saves time.
- Hold the pad flat against the surface and let the abrasive do the work; bearing down wears the screen out twice as fast without cleaning any better.
- Splash a little water on the hot griddle (you'll get a hiss and steam) and scrub immediately while the steam lifts the grease — this is the classic diner technique and the fastest way to degrease.
- Work in straight, overlapping strokes in one direction rather than circles; circles leave visible swirl marks on polished steel that show up on the next batch of food.
- Replace the screen the moment it begins to shed black grit onto the food — once the bond breaks, you're just rubbing carbon back into the surface.
- Wear a heat-resistant glove or keep your hand firmly on the holder, never on the plate; even at 300°F a stray touch will blister skin fast.
- Never use detergent on a seasoned griddle — soap strips the polymerized oil and you'll have to re-season from scratch.
- For chrome or hardcoat griddles, use only pads the manufacturer specifically approves; an aluminum-oxide screen will chew up a chrome surface in a single pass.
- After cleaning, wipe the still-warm surface with a thin coat of grapeseed, canola, or clarified butter to start rebuilding the seasoning before the griddle cools.
