Plastic Press Liner
Plastic liner placed in a cheese or tofu press so the pressed block releases cleanly.
A plastic press liner is a smooth or perforated plastic sheet or bag set inside a press before the curd or food goes in. It gives the pressed block a clean surface, helps whey or water drain out, and lets the finished cake lift out without sticking. Cheesemakers and tofu makers use it to keep the press sanitary and to shape a tidy, even slab.
A plastic press liner is a thin, food-grade sheet — almost always polyethylene (PE) or polypropylene (PP) — sized to sit between a press follower and the curds (or between the mold and its base) during cheese or tofu pressing. At its core the liner solves one stubborn problem: cheese curds weld themselves to whatever they sit on. A wet, warm, protein-rich mass under pressure becomes adhesive, and without a barrier the finished wheel tears on release, leaving a ragged face and a follower disc caked in curd. The liner breaks that bond so the wheel lifts out clean and the press comes apart without scraping.
Beyond clean release, the liner also acts as a moisture-control layer. A solid sheet holds water in, which is exactly what you want for soft cheeses, fresh cheeses, and tofu where the goal is a smooth, intact block. A perforated sheet lets whey drain from the bottom and sides of the mold during the press, which is what hard and semi-hard cheeses need to knit a tight, dry curd. The right liner is therefore a small but high-leverage choice — the difference between a wheel that holds its shape on day one and one that slumps, sticks, or sweats in the cave.
For home cooks, liners are usually bought as pre-cut rounds (commonly 8–10 in / 20–25 cm) sized to popular press followers, or as rolls to trim to fit a custom mold. They are reusable, inexpensive, and quick to sanitize, which makes them more practical than stacking cheesecloth for repeated pressings. A few habits — light wetting before placement, gentle pleating at the edges, and a quick inspection for warps or cuts before each use — are what separate a liner that just works from one that imprints, tears, or harbors off-flavors.

Choosing Perforation Style
Perforation is the most consequential decision when buying a liner, because it sets the moisture behavior for the entire press. Use this as a working rule of thumb, then adjust by feel for your specific recipe and humidity.
- Solid liner: fresh cheeses (ricotta, cream cheese, fromage blanc), lactic-set cheeses, and tofu. Holds water in so the block keeps a smooth face and square edges.
- Perforated liner: cheddar, gouda, tomme, and other pressed curds that need to drop whey through the sides and bottom to knit a closed-texture wheel.
- Double layer: place cheesecloth directly on the curd, then a perforated liner on top — the cloth catches fines, the liner handles release and drainage.
- No liner: only acceptable when a recipe explicitly calls for a bare mold and the cheese is meant to form a natural rind against the follower (uncommon in home pressing).
Working with the Liner
A few small habits during placement and cleanup make a real difference in how cleanly a wheel or tofu block releases, and how long the liner lasts.
- Wet the liner lightly under cool water and shake off the excess before laying it on the curd. A damp sheet conforms to the surface and lies flat, which prevents trapped air pockets that print into the cheese.
- Pleat, don't crumple. If the mold is slightly smaller than the liner, fold small, even pleats against the side wall rather than wadding the excess — this avoids channels that wick whey back up into the curd.
- Center it precisely under the follower. An off-center liner creates a hinge effect and a lopsided release.
- Sanitize between batches with a no-rinse food-safe sanitizer (such as a star-san dilution) rather than household dish soap — soap residue can flavor delicate fresh cheeses and is hard to fully rinse from plastic.
- Store flat or loosely rolled. Tight creases set into the plastic and will imprint onto the next wheel you press.
