Packaging Tray

Disposable molded tray that holds portioned food for display, packing, or takeout.

A packaging tray is a shallow molded tray, often foam, pulp, or plastic, used to present and contain portioned food. Kitchens and shops use it to pack meat, produce, pastries, or prepped components for sale or transport, frequently paired with shrink film or a lid. The recessed shape keeps items tidy and absorbs minor drips, making it a staple for grab-and-go and bulk prep.

A packaging tray is the disposable, food-contact platform beneath almost every portion of food that leaves a commercial kitchen — the foam platter under a wrapped steak, the clamshell around a burger, the vented cup of cherry tomatoes, the foil pan a caterer slides into a combi oven. Unlike reusable hotel pans or food-grade storage containers, packaging trays are designed for one journey: from filler to consumer to waste stream, and they are engineered around that single trip. Materials range from petroleum-based plastics (PET, PP, OPS, EPS) to plant-fiber alternatives (molded pulp, bagasse, PLA) to aluminum, and each behaves very differently under heat, cold, and moisture.

The right tray quietly does three jobs at once. It carries the food without leaking or crushing it, it presents the product clearly through a film, lid, or open display, and it survives the thermal and humidity conditions it meets along the way — from a butcher case near 0 °C to a delivery bag pushing 70 °C. Get the substrate wrong and you get fogged plastic, a soggy cake board, or a clamshell that collapses onto a hot sandwich. The material is the spec, and food-contact regulations (FDA 21 CFR 174–177 in the US, EU 1935/2004 in Europe) are the floor every legitimate tray meets, not the ceiling.

Choosing a tray comes down to three questions: how cold or hot the food will be, how long it sits before consumption, and whether the local waste stream accepts the substrate. Answer those, and the rest of the catalog — resin code, cavity count, lid film, soaker pad — falls into place.

Types & varieties

Meat / butcher tray

Foam (EPS) or clear OPS/PET, flat with a raised lip; sized 1S–6S; paired with a soaker pad and stretch overwrap; the standard behind-the-counter display for fresh cuts, poultry, and seafood.

Hinged clamshell

Single piece with an integrated lid that snaps shut; PP for hot takeout, OPS for cold display, bagasse for compostable service; common in burger, salad, sandwich, and bakery-box shapes.

Compartment tray (CPET/PP)

Two to five sealed wells for ready meals, school lunches, and airline catering; CPET tolerates oven or microwave regeneration to roughly 200 °C.

Produce punnet / clamshell

Vented PET for berries, grapes, cherry tomatoes, and mushrooms; sized by the pint and quart; vents control condensation that would otherwise spoil the fruit.

Molded-pulp tray

Made from recycled paper or virgin bagasse; used for 30-egg flats, produce, and as a foam-clamshell substitute; stays rigid when wet if the fiber is sized correctly.

Aluminum tray / foil container

Press-formed 3003 or 8011 alloy; oven-, grill-, and freezer-safe; ranges from 1 oz sauce cups to full-size hotel pans; pairs with foil board or dome lids.

Cake board and pastry tray

Corrugated or foam-centered circular or square boards in tiered 6–18 in sizes, often silver or gold; support fondant cakes and form the base of bakery boxes.

Soufflé cup / portion cup

PP, paper, or PLA in 0.5–5 oz sizes; used for sauces, dressings, and samples; translucent lids sold separately.

Trifold / sheet-pan liner

Folded kraft or molded fiber that doubles as a to-go plate or sandwich base; the commissary's replacement for foam plates.

MAP tray (modified-atmosphere packaging)

Rigid PET or PP tray sealed with a high-barrier top film; designed for gas-flushed fresh meat, cheese, and prepared salads; needs 25–80% headspace for the gas mix to protect the product.

Soaker pads and absorbent liners

The soaker pad sitting under a wrapped steak is its own engineered product, not a paper towel. It is two layers bonded together: a top sheet of absorbent cellulose wadding that drinks up eight to twelve times its weight in purge, backed by a fluid-impervious PE or PET film. The absorbent cellulose side must face up toward the meat, with the plastic film side facing down onto the tray — that orientation wicks juice away from the protein and keeps the tray from pooling. Placing the pad on top of the meat is a common butcher error that traps moisture against the surface, encourages bacterial growth, and turns the cut grey.

For raw poultry and fish, choose pads with an antimicrobial treatment — typically a citric acid or similar food-safe wash embedded in the cellulose — and confirm the pad is FDA-cleared for direct contact with the protein. Pad size should match the cut: a pad that overhangs the tray is one that will fold up the side of the film and leak at the seal.

Material at a glance

Match the substrate to the job before matching size to product. A short field guide:

  • Hot hold, microwave, or oven-regenerate: CPET or PP. Never PLA, foam, PVC, or any plastic lidded over steaming food.
  • Cold display, fresh case, or retail wrap: PET, OPS, or molded pulp — all hold up at chill temperatures and take film cleanly.
  • Freezer storage: PET or PP. PLA turns brittle past ~12 months and EPS can shatter on impact.
  • Hot takeout that needs to look like plastic: PP clamshell with steam vents; OPS fogs and warps under trapped steam.
  • Compost stream (industrial or municipal): bagasse or uncoated molded fiber first; PLA only if the facility reaches ≥58 °C.
  • Grill, combi, or broiler: aluminum trays and foil containers; nothing plastic survives direct radiant heat.

Tips & pitfalls

  • Place soaker pads under the protein, never on top — the absorbent cellulose side faces up toward the meat to wick purge away, while the impermeable film side faces down onto the tray to prevent leaks.
  • Choose PP or CPET for anything that will be microwaved, lidded, or oven-regenerated; PLA looks like plastic but softens above ~50 °C and will deform under hot food.
  • Vent hot foods before lidded transport, or use clamshells with built-in steam vents; trapped steam softens OPS and fogs PET, killing visual presentation.
  • Don't size up beyond the product — a small steak on a 5S tray looks thin and over-runs the soaker pad, which then leaks at the edges.
  • For raw poultry, use pads with an antimicrobial treatment (e.g., citric acid) and confirm the pad is FDA-cleared for direct contact with the protein.
  • In composting streams, bagasse beats PLA unless the facility runs an industrial process — PLA contaminates home compost and many municipal programs.
  • Color-code by application (red for raw meat, green for produce, blue for fish) to reduce cross-contamination risk during prep and storage.
  • Store PET and OPS away from UV and heat; both yellow and become brittle in direct sunlight, ruining shelf appearance.

Working temperature ranges
PP: −20 °C to 120 °C; PET: −40 °C to 70 °C; EPS foam: −40 °C to 80 °C; PLA: 0 °C to 45 °C (distorts above ~50 °C); aluminum: −40 °C to 250 °C.
Microwave & oven
PP and CPET are generally microwave- and oven-safe; bagasse is microwave-safe. EPS foam, OPS, PLA, PVC, and aluminum are not microwave-safe.
Compostability
Bagasse and uncoated molded fiber break down in commercial composting; PLA needs industrial composting at ≥58 °C. Most plastic trays are not home-compostable.
Soaker pad
Cellulose wadding bonded to a PE/PET film; absorbs 8–12× its weight in liquid; absorbent cellulose side up (toward the food), impermeable film side down (against the tray).
