Unbleached (Brown) Parchment

Modern unbleached baking parchment is a wood-pulp paper — typically softwood — pressed, calendared, and coated with a thin layer of food-grade silicone. The defining difference from its bleached sibling is that the pulp skips the chlorine or chlorine-dioxide step that turns paper white, so the finished sheet keeps the warm tan of the original fiber. That omission of chlorine from manufacturing is essentially the only reason the product exists as a distinct category; the silicone coating, heat tolerance, and nonstick release are otherwise identical to bleached parchment.
In the oven, unbleached parchment behaves like any silicone-coated baking paper. Most manufacturers rate it to roughly 420–450°F (215–232°C) for sustained use, with brief excursions — under a broiler, on a pizza stone, or for a few minutes of flatbread baking — generally fine if the sheet is not left exposed to a glowing element. The silicone layer gives reliable release for cookies, vegetables, fish en papillote, and cakes without greasing the pan, holds steam well enough inside a folded pouch, and is sturdy enough to lift a whole sheet of roasted vegetables off a pan in one motion.
The case for choosing unbleached is environmental and aesthetic rather than functional. Skipping the chlorine step keeps chlorinated effluent out of the mill's waste stream, and the tan sheet looks honest under a rustic loaf or in a bread basket. Browning, sticking, and heat behavior are unchanged from bleached parchment — those are driven by sugar, fat, and surface temperature, not by the color of the paper underneath.
Types & varieties

Unbleached vs. Bleached: What Actually Changes
Unbleached and bleached parchment are functionally identical in the kitchen. Both are wood-pulp paper coated with food-grade silicone, both are rated to roughly the same temperature range, and both release baked goods the same way. The only differences live at the mill and on the plate.
Bleached parchment is treated with chlorine or chlorine dioxide to whiten the fiber, a process that produces effluent the manufacturer has to manage. Unbleached paper skips that step and leaves the pulp's natural tan intact. Some 'natural' branded papers receive a mild peroxide or oxygen whitening to soften the color; strict unbleached makes no such concession and stays a deeper, warmer brown.
Browning, sticking, and oven performance are unchanged across the two. Sugar, fat, and surface temperature drive the browning of a cookie — not the color of the paper beneath it. The real reason to choose unbleached is to keep chlorinated compounds out of the manufacturing chain, and secondarily, because the tan sheet looks handsome under a rustic galette or in a bread basket.

Tips & pitfalls
- Never substitute wax paper in the oven — its paraffin or soy-wax coating melts, smokes, and can ignite above roughly 350°F.
- Cap sustained oven use near 420°F; the broiler is fine in short bursts, but watch any edge that is exposed to a glowing element, which can scorch or ignite.
- Use the wet-and-wrinkle method for pouches and round pans: crumple the sheet under running water, wring it out lightly, then flatten — it conforms to a pan or holds steam in a folded parcel.
- Reuse sheets only for dry applications like cookies or toast; high-fat, sugary, or heavily charred bakes contaminate the silicone and the next round will stick.
- Do not grease parchment out of habit — the silicone is the release layer, and adding fat is unnecessary and can smoke on a hot empty sheet.
- Trim sheets flush with the pan edge; overhanging paper can catch an oven rack and flip the pan, and any exposed tail of paper is the first thing to scorch.
- For very high-sugar bakes like lacy tuiles or long meringues, dust the parchment with rice flour or switch to a silicone baking mat — sugar can bond to parchment during extended bakes.
- Store rolls in their original box or a dry drawer; humidity curls the sheet and degrades the release, and a soggy roll is the most common cause of parchment that fails to lay flat.
