Decanting Candle

A small candle that backlights the bottle neck so you can stop pouring before sediment enters the decanter.

A decanting candle is a low flame or light placed beneath the shoulder of a wine bottle during decanting. Backlighting the neck lets the server see the wine flow and spot the first dark wisps of sediment, so pouring can stop before any grit reaches the decanter. It is a traditional touch for serving older, sediment-heavy red wines.

A decanting candle is a small, focused light source — almost always a tea light set in a low metal holder — that sits behind the neck and shoulder of a wine bottle as it is poured into a decanter. In the dim, flattering light of a dining room or cellar, fine sediment, tartrate crystals, or simply the transition from clear wine to cloudy wine is nearly invisible to the naked eye. The candle solves this by throwing a warm, concentrated band of light straight through the glass at the exact point where the bottle is tilted, turning the wine stream itself into a readable column.

The form is deceptively simple — a stubby brass or chrome base a few centimetres tall, often hooded or funnel-shaped to focus the beam — and the technology has barely changed since it entered formal European table service in the 19th century. What does change is the pourer's skill: the candle only reveals what is happening; the decision of when to stop pouring still belongs to the person holding the bottle. Watch the stream a beat before the neck, and stop at the first sign of haze, grit, or a dark trailing cloud.

Modern LED versions replicate the warm colour temperature of a real flame and are now standard in venues where open flames are restricted, but the working principle is identical: a small, low, warm light positioned at bottle-shoulder height behind the glass.

Types & varieties

Open tea-light holder

Simple metal base with a recess for a standard tea light; the cheapest and most common form, though its light is the most diffuse.

Funnel- or cone-shaped metal hood that focuses the flame into a tight band directed through the bottle neck; the preferred form in restaurants and the most readable design.

LED / rechargeable decanting light

Reading the wine stream

The candle is a tool, not a decoration. The whole point is to make the wine stream itself legible, so the pourer can stop before sediment enters the decanter. In practice, sediment rarely appears at the neck first; it usually shows up as a faint haze or a dark cloud in the lower stream a second or two before it reaches the glass. Watch the body of the pour, not the lip, and treat the first sign of grit, a trailing cloud, or a sudden dulling of colour as the cue to ease off.

  • Position the flame directly behind the bottle's shoulder, at the level of the wine stream — not behind the label and not under the punt.
  • Watch the column below the neck as you pour; sediment usually announces itself in the stream a beat before it reaches the glass.
  • Stop the moment you see haze, a dark cloud, or visible grit; finish the last centilitre into a small glass or back into the original bottle, never into the decanter.
  • If the bottle is older than 15 years, expect to stop early; aged bottles often begin releasing sediment once disturbed and tilted, so pour slowly and watch from the first centilitre.

Flame versus LED

A real candle flame throws light at roughly 1900–2000K, a warm amber that cuts through red wine without bleaching the colour. Most phone torches and cool-white LEDs sit at 5000–6500K, which makes the wine look slightly purple and flattens the contrast between clear wine and the dull, particulate-laden tail of a bottle approaching its sediment layer. The old brass tea light still wins on pure readability; LEDs win on safety and venue compliance.

  • Choose a real flame where regulations allow and the dining room is dark enough — the warm colour temperature genuinely helps the eye read sediment.
  • Choose LED on boats, in historic cellars, or in any venue with open-flame restrictions; warm-tone models are now widely available.
  • A phone torch laid on its side is a workable last resort; warm the colour temperature with an amber filter or a low-warmth setting where the screen allows, since a cool blue beam makes sediment harder to read.

Tips & pitfalls

  • Use unscented tea lights only — scented paraffin or citronella candles throw aromas into the glass at point-blank range.
  • Dim the room further if you can; the candle works by contrast against a darker background, and a fully lit dining room washes it out.
  • Keep a folded napkin or small drip tray on the candle base — splash-back is common when the bottle is nearly empty and the angle is steep.
  • Never leave a lit candle unattended beside a decanter full of wine, and keep it clear of the decanter's rim to avoid scorching or hairline cracks in thin crystal.
