Spatula covers two very different tools: the flat turner you flip and lift food with, and the flexible blade you scrape and fold with. Both are everyday essentials, and the trick is matching the material to your pans — metal on cast iron and steel, silicone or nylon on nonstick. A good one is thin enough to slide under food cleanly and stiff enough to support it.

Types & varieties

Metal turner / fish slice

Thin, slightly flexible steel that slides under crisp food. For cast iron and stainless — never nonstick.

Silicone spatula (scraper)

Flexible blade for folding batter and scraping a bowl or pan clean. Heatproof and nonstick-safe.

Offset / slotted turner

Bent neck for clearance and slots that drain grease — great for eggs and burgers.

Fish spatula

Long, thin, flexible, slotted blade angled for sliding under and turning delicate fillets.

Wooden spatula

Flat edge that scrapes fond and won't scratch any pan; needs occasional oiling.

Match material to pan

Metal turners will gouge nonstick coatings, so reserve them for cast iron, carbon steel, and stainless. Use silicone or nylon in coated pans. A thin, slightly flexible front edge is what lets a turner glide under a crust instead of crashing into it.

Tips & pitfalls

  • Let food release on its own before flipping — if it sticks, it usually isn't seared yet.
  • Get under the whole piece, not just an edge, so it lifts in one confident motion.
  • A flexible fish spatula is the best all-purpose turner most home cooks never buy.
  • Use a silicone spatula to fold whipped egg or cream into batter — it keeps the air in.
  • Scrape the bowl down with a silicone spatula to get every last bit of batter or dough.
